What Constitutes
Healthy Vinegar.
The Pure Food Department of
the State announce', as part of its
proceedings: “In two cases, after
the inspector had bought the articles
as ‘Apple Vinegar,’ he found rn
the barrel in small letters the words
‘Distilled Vinegar’. Dealers ure
violating the law in selling a product
jis vinegar or apple vinegar, even if
the barrel is marked ‘Distilled Vine*
gar’. The consumer must be uoti
fled of the character of the product
be is buying. There seems to be a
misunderstanding as to the term
‘White Vinegar’. While vinegar is
a misnomer and all such should be
labeled ‘Distille 1 Vinegar’. If it be
labeled ana sold as White Vinegar,
dealers will be violating the law, as
we recognize by the term vinegar a
product derived fiom apples, un
less it be modified by such terms as
‘malt’, ‘wiue’, ‘sugar’, Jglucose’ or
‘distilhid’. These term.- signify the
source from which the vinegar is
derived.”

Official Fure Food Notice
To Dealers Generally:
We have completed the examinas
tion of 65 samples of sausages,
collectrd in various parts of the
state. Eleven were mixed. Two
contained sulphite of soda. All
wtre on the retail market as pure
food products. I desire to call the
attention of dealers to the fact that
thej r are violating the law bj r such
a misrepresentation and in the future
will be prosecuted. Tbe most seri.
ous violation of the law is the
adding of chemical preservatives.
Parties are going around selling
preservatives under fanciful names
for meat and sausages. They repre
sen the substance as perfectly harm
less and complying with the pure
ood law. In nearly everv instance
the so-called substance is a chemical
preservative and in'urious to health.
We warn all dealers that they are
violating the law by the use of
such preservative*.
