For the smaller party the menu,
though simple, should Include one
hot dish In addition to tea or coffee.
There Is nothing nicer than a com
bination such as this—creamed or
scalloped oysters -with crisp celery,
hot rolls or biscuits and Jelly. A
separate dessert course Is not nec
essary if little cakes gre passed
with the coffee.
Such a supper will satisfy the
hungriest members of the party
and at the same time It will be
light enough to tempt the appetite
of those who ate too heartily ai

place. The recipe for theoe bis
cuits is given below with recipes
for the oyster dishes and the little
dessert cakes also.
Creamed Oysters
1 quart oysters
6 tablespoons Crlsco
Vfc cup flour
1 quart rich milk
Pepper and salt
Make a white sauce with thi
Crlsco. flour and milk. (The oyster
liquor may be used to replace part
of the milk If desired) Combine
the oysters and sauce. Cook Just
until the edges of tbs oysters start
to curl. Add seasoning and serve.
Scalloped Oysters
1 quart oysters
4 cups soft bread-crumbs
H cup milk
H cup Crlsco
Salt and pepper
Grease baking dish with Crlsco.
put In a layer of crumbs, thea a
layer of oysters, dot With bits of
Crlsco. sprinkle with salt and pep
per. Repeat, ending with a layer
of crumb* with small pieces o*.
Crlsco dotted over them. Do not
have more than two layers ot
oysters. Moisten with milk and
oyster liquor mixed together. Bake
to a hot oven until brown and
serve to the same dish.
Standard Biscuit Recipe
i cups bread flour
4 teaspoons baking powder
4 to • tablespoons Crlsco
H cup milk or water (variable)
44 teaspoon salt
Sift dry Ingredients three times
Blend Crlsco to with fork, add
liquid gradually. Turn on floured
board. (Knead Into shape) Roll tt
took thick. Cut. Lay on well
greased pan. Brush top with milk
or melted Crlsco. Bake In hot oven

Chocolate Dessert Cakes
cup Crlsco
I cups sugar
X cup milk
4 eggs
4 squares melted chocolate
<1* cake)
I cups pastry flour
5 teaspoons baking powder
t teaspoons vanilla
Cream Crlsco add the sugar
slowly, then the beaten egg yelkn.
Melt the chocolate and add. Add
flour and baking powder sifted to
gether. alternating with *ullk. an*,
add vanilla and fold In stiffly beat
en egj whites. .. Bake tn greased
