lina experiment station calls attention

and palatuhle food not only for man,
but for domestic a^lmalt, they liuvo

they uve too liulky to pay for extended
transportation, und, second, tliey can-

The station, therefore, undertook to
11 nil a tuethod by which the potatoes
might he dried, with an Improvement
of the keeping quality nnd m> loss of
edible quality. A::, r tmnivroiis exper
iments It believe.* that those results
may he obtained by bulling the polar
toes In an open kettle and drying I11 a
fruit evaporator. The method followed
at the station was as follows:
By means of a derrick used In the
cannery severul bushels of green pota

to a large boiler In which the; water
was heated by steam. To secure uni
form cooking the roots should be nearly
of tho same size. Those weighing from
ono to two pounds required un hour
for thorough cooking. Six to eight
hours were required for evaporating
thorn at a temperature- of 160 degrees
F. An .ordinary luborer peeled and
sliced a bushel per hour.
The evaporated product. It Is claimed,
“will keep for an indefinite time und
hear transportation to any part' of the
world ut any season.” It eontulned:
"Moisture. 0.42 per cent; crude ush, 2.48
per cent; crude protein, 6.0(1 per cent:
crude fat. >0 per ce:il: crude fiber. 2,uS
per cent; nitrogen free extract, SO.Ht
per cent. ’To prevent hardening of the

To prepure tho product for table use
