Equipment Needed for Making Syrup
by the Invertase Process.
Since syrup made by this pvocess-
must be evaporated in two stakes,
for continuous operation two evap
orators should be used. Two tanks
for treatment of the semi-syrup with
the invertase are also essential. The
evaporators may be of any of the us
ual types, though it is desirable that
the second or finishing evaporator be
of the non-continuous type so that a
definite amount of the semi-syrup can
be evaporated to finished syrup, for
thus a more uniform product can be
obtained. The size of the evaporators
and also of the tanks, will, of course,
depend upon the amount of cane it is
planned to grind per day. The nec
essary size of the invertase treat
ment tanks can be obtained from the*
following data. Ten (10) tons of cane
will give about 1500 gallons of juice.
This amount of juice will make 600
gallons of semi-syrup of 20 degree
Baume density and this in turn will
make 220 gallons of syrup of 42 de
grees Baume measured at 00 degrees
Fahrenheit. For a syrup plant in
which it is planned to grind ten tons
of cane per day of twelve hours, two
tanks of a capacity of at least 600
gallons each should be provided. The
above suggested equipment is planned
on the assumption that the syrup
plant will operate approximately
twelve hours a day, shutting down
each night for approximately the
same length of time. The procedure
would then be to fill one tank each
klay with 20 degrees Baume ssmi-
syrup from the first evaporator, add
the invertase at the time of shutting
down, then the next day evaporate
thi3 semi-syrup to finished syrup, us
ing the second evaporator. While this
first tank of semi-syrup is being evap
orated to finished syrup in the second
evaporator the first evaporator would
be evaporating mill juice to semi-syr
up and discharging it into the other
tank. Thus a continuous operation
would be maintained, one tank being
filled each day- with 20 degrees Baume
semi-syrup and one tank being emp
tied each day. One evaporator would
be in constant use evaporating juice
to 20 degrees Baume semi-syrup and
the other evaporator would be in con
stant use evaporating the 20 degrees
Baume semi-syrup made the previous
day to finished syrup. By this pro
cedure each tank of semi-syrup would
stand over night, thus giving a suffi
cient period for the action of the in
vertase. Of course the first evaporat
or would be piped to discharge into
either tank and each tank would be
piped to discharge into the second
evaporator.

means that the syrup should be cook
ed to a Baume reading of 36-37 de
grees when the measurement is made
in a sample of the boiling hot syrup
taken directly from the evaporator.
These directions should be followed
as closely as possible but slight va
riations will not materially affect the
result. For instance, the recommend
ed density of 20 degrees Baume should
be taken as a standard but a deviation
of 2 or 3 degrees either, way is per
missible. The same may be said of
the temperature. The temperature of
the semi-syrup should preferably be
at 140 degreesF. when Jhu invertase
is added, but a range of 5 degrees
higher or 10 degrees lower may be al
lowed. Three (3) pints of invertase
to 100 gallons of semi-syrup has been
found to bring about sufficient inver
sion of sucrose to iavert sugar to pre
vent crystalization. The addition of
a larger amourtt of invertase than this
proportion will only result in the in
version of more sucrose than is nec
essary, hut this will in no way injure
the finished syrup. The choice of
twelve hours for the action of the in
vertase on the semi-syrup is made as
being convenient length o ftime. An
hour or two less time will not greatly
affect the result. A slightly longer
time will only result in a somewhat
greater inversion of the sucrose which
will not be objectionable. The meth
od above outlined can be used in both
large and small syrup plants.
Advantages of the Method.
i he process of making cane syrup
as described above is naturally a lit
tle more troublesome and expensive
than the present very simpl mthods
employed in our Southern States witli
the exception of Louisiana. However,
the advantage that will result from
the manufacture of a better product,
one that will not crystalize or readily
ferment, should far more than coun
ter-balance the additional trouble and
expense involved in this process. Syr
up made by this method can also be
packed in fiber containers with much
more satisfactory results than syrup
made by the usual methods.
Trial Demonstrations of thiH Method.
This method of preventing fermen
tation and crystalization may be eas
ily tried on a small scale aUa neglig
ible expense. For the purpose of
making a small trial run it is only
necessary to have two or three clean
barrels in which semi-syrup may be
placed. Any other suitable container
may be used. Large mills will prob
ably already have extra tanks or other
containers which can be used. An ap
propriate amount of semi-syrup of
approximately 20 degrees Baume is
prepared and placed An the barrels

is adjusted to as near 140 degreesF.

after thorough mixing, is allowed to
stand over night. The regular pro
cess used by the syrup maker is then
interrupted for a sufficient length of
time the next day to evaporate the
semi-syrup to finished syrup. 'If,
however, this method is adopted as
a permanent process two evaporators
must, of course, be used und two addi
tional tanks provided as already in
dicated.
The Bureau of Chemistry will, so
far as possible, furnish, upon request,
during the season of 1920 a sufficient
amount of invertase free of charge to
any syrup producer who wishes to try
this method on a small scale and will
send a representative to give a dem
onstration of the method. There will
be no expnse to the syrup producer
for this demonstration. Those who
wish a dmonstration of the method
should write immediately to the Bur
eau of Chemistry, U. S. Department
of Agriculture, Washington, D. C.,
stating the approximate date when
they will begin making syrup and the
approximate date when they will fin
ish. If it appears at the end of the
season that a sufficient number of
syrup makers wish to use this meth
od as a permanent process the Bureau
of Chemistry will try to arrange a
