Pepsin is the chief element,orgreat digestingprin-
ciple of the gastric juice—tbe solventoftbe food, the
purifying, preserving and stimulating agent of the
stomach and intestines. It is extracted from the di
gestive stomach of the ox! thus forming an artificial
digestive fluid, precisely like the natural gastric juice
in its chemical powers, and furnishing a complete
aud perfect substitnte forit. By the aid of this pre-, years
paration, the pains and evils of indigestion and dys
pepsia are removed, just as they would be a healthy
stomach. It isdoing wonders for dyspeptics, caring
cases of debility, emaciation, nervous decline, and
dyspeptic consumption, supposed to be on the verge
ofthegrave. The scientific evidence upon which it
is based, is in the highest degree curious and remark
able.
Scienfifc EviJer.ce—Baron Liebig on his celebrat
ed work of animal chemistry, says: “an artificial di
gestive fluid, analogous to the gastric juice, may be
readily prepared from the mucous membrane of the
stomachol the calf, in which various artiales of food,
as meat and eggs, will be softened, changed, and di-
gested.just in the same manner as they would be in
the human stomach "
Dr. Pereira, in his famous treatise on “food and
diet,” published by Fowler A Wells. New York,
page 35, states the same great fact, and describes the
method of preparation. There are few higher author
ities than Dr, Pereira.
Dr. Combe,in his valaable writings on the “Physi-
nlogy of Digestion,” observes that “a diminution of
the due quantity of the gastric juice is a prominent
mid all prevailingcaase of dyspepsia;” anil he states
tuat “a distinguished professor ol medicine in London
who was severely afflicted with this complaint, find
ing every thing else to fail, had recourse to the gastric
juice, obtained from the stomachs of living animals,
which proved completely successful.”
Dr. Graham, author af the famous works on “Vege
table Diet,” say*: "It is a remarkable fact in physi
ology, thatthestdmachs of animals, macerated in wa-
ter.impartto the ffriid the property of dissolving vari
ous articlesoffood, and .of effecting a kind of artificial
digestion of them in nowise different from the natural
