We should save such food for the soldiers as are easily transported and furnish more strength and energy <to them. Some of them are pork, beef, sugar, flour and fats. They are more nutritious for hard work than other foods which are hard to (transport. We must learn to use the substi tutes of these foods which are being worked out by our (thrifty men and women. They furnish just as much food value as the foods which we have been accustomed to eating. They are better for us than so many sweets of different kinds We can learn to like them just as well as the foods which we must send the sol diers if we win this war. We must use the substitutes for pork and beef which are eggs, cheese, milk, beans, nuts and peas. They give us the amount of protein needed to keep up life. For sugar we can use syrup, canned fruits, dried fruit, jel lies, preserves and molasses. We must use crushed peanuts, commeal, soy bean meal and velvet bean meal | for wheat flour. We can also use oat j meal, rye flour, rice and grits. Our Allies do not know how to prepare these foods so we must use them at home and send our other foods to them. The following: recipes have been ! tried and have been found very sat ! isfactory: Peanut Wafer* 2 cups sifted flour, 1 egg, c crushed peanuts, %c sugar, 1 tsp salt, 2tbsp butter, 2tsp baking powder, milk suffi cient to mix (%c) Si fit the salt and baking powder with the flour and mix with the pea nuts which have been lightly crush ed with a rolling pin. Cream togeth er the butter and sugar, add to this the butter and sugar, add to his the well beaten egg, then the flour and peanut mixture. Use enough milk to make a dough of such consistency that it can be rolled on the board. Turn into a floured board, roll thin and cut with a biscuit cutter. Place in shallow tins lightly greased and bake in a fairly hot oven until a deli cate brown. Rice Bread 2 cups boiled rice, 1 teaspoonful salt, 6 cups flour or more if neces sary, 2 tablesponfuls shortening, 1 cake yeast, dry or compressed or I*4 cups liquid yeast, 2 tbsp. sugar, cook H cup of rice with as much water as it will absorb until it is soft enough At a bargain will sell seven-room house and store room, with one acre of land, at railroad crossing, known as J. Cornmeal Ginger Bread 1 cup cornmeal, 1 teaspoonful cin namon, 1 cup wheat flour, % tea spoonful cloves, 1 teaspoonful soda, 1 cup sour milk, 3 teaspoonfuls salt, 1 cup molasses, 2 teaspoonfuls gin ger, 2 tablespoonfuls shortening, 1 egg. Sift together dry ingredients, combine milk, melted Shorteming, molasses and beaten egg. Add liquid ingredients to dry, bake in moderate oven. Searcy The grand jruy returned the gen eral presentments Tuesday afternoon and the body was dismissed for the term by Judge Searcy. Nothing of more than ordinary interest was con tained in the presentments. The Pro gress-Argus will publish the present ments in full in the next issue.
