Thirty-eight white and twenty-four
colored men, becoming 21 years of
age since June 5, 1917, registered
here Wednesday in accordance with
a recent law enacted by congress. The
total registration of 62 is below the
estimate members of the board had
placed on the county.
In the registration a year ago col
ored registrants composed about 60
per cent of the total number, where
as in the regstration last Wednesday
the whites had a majority. It is
thought likely that not all the colored
men subject to registration were
properly advised of he date, place,
etc.
The new registrants Viill be given
their questionnaires later, the local

In March and April the Secretary
of Agriculture, on recommendation
of th Office of Public Roads and Ru
ral Engineering, approved 212 State
road-building projects involving more
than 2,500 miles of highways under
the Federal aid road act. The estima
ted cost of these improvements to the
States is about $15,000,000. The fed
eral aid allowed is more than 5,000,-
000.

FAVORITE RECIPES
A Good Cucumber Pickle Recipe
Put about a gallon of small cucum
bers in a granite or earthen vessel
Throw on a good double hand full of
salt, cover with boiling water and let
stand for twenty-four hours. Then
rinse well and stand two hours to
freshen. Cover with vinegar, and let
come to a boil, but do not boil them.
Do this three mornings in succession,
fter they have cooled the last morn
ing pack in well sterilized jars and
cover with cold vinegar and seal. If
sweet pickle are wanted, use spices
and sugar to suit taste.
To Make Brine to Keep Cucumbers or
Other Vegetables for Future Use
To each gallon of water used add
one pound of salt and one cup of vin
egar. Gather and wash cucumbers,
place in vessel, and cover well with
this solution, being careful to add
more salt when more cucumbers are
added. If barrel is used when it is
full add 3 lbs of salt every week for
five or six weeks. Remove scum as it
forms, and add one qt. of vinegar.
If these directions are followed cu
cumbers or any other vegetables can
be kept indefinitely and they will not
soften.
Beans put up in this way make fine
pickle.
Dill Pickle
This recipe will make four gallons
of pickle:
One lb. of dry dills of two lbs.
green, one to two ounces of mixed
pickle spices. Put one half dill and
one half spices in bottom of vessell,
then fill with cucumbers put on rest
of dill and spices. Put on a cover of
cabbage or grape leaves about two
inches thick, and weight down. Then
add two cups of vinegar. Make a

brine by adding % lb of salt to each
gallon of water. Cover the pickle,
keeping them well under the surface
of water. When fermentation takes
place keep off scum. Whole green to
matoes can be used instead of cu
cumbers.
To Make Sweet Cucumber Pickle
From Brined Cucumbers
4 lbs. of brined cucumbers, 1 lb. of
sugar, 1 qt. of vinegar, 2 oz. stick
cinnamon, 2 oz. of race ginger, 1 oz.
of whole cloves. Wash cucumbers
and let stand two hours in cold water
to freshen. Rinse and let stand two
hours more, take cucumbers out put
in an earthem vessel or granite ves
sel; cover with a solution composed
of 1 qt. of vinegar and 1 qt. of water.
Let stand in this two hours. Add 1
qt. of vinegar and let stand an addi
tional two hours. Then remove the
cucumbers, add to the solution the
sugar, and the spices that have been
tied in a thin bag, boil this ten min
utes. Let this syrup stand until it is
cold, then pour it over the cucumbers
and let stand over night, to make the
encumbers plump. Pack in sterilized
jars and pour the syrup over them
cold and seal.
All the above recipes have been
tested and I know the mto be good.
