If you’re looking for a
place to visit that’s slightly
off the well-worn tourist
track and yet offers color
ful countryside combined
with ancient cities and mod
ern comforts, check out
Czechoslovakia.
Whatever kind of holiday
you hanker for, whether it’s
sightseeing among castles
and chateaux - the Czechs
boast of 2,500-relaxing at
such famous spas as Marien
bad, Carlsbad and Piestany,
or skiing the High Tatras in
Slovakia, you can find it in
this relatively small, friendly
country at the crossroads
of Europe.
And to understand the
heart and soul of the Czech
people you have to love
good food. The Czechoslo
vakian cuisine, while related
to German cooking, is more
subtle, refined and much
lighter. If you are in the
country for more than an
hour you’re sure to be
sampling dumplings--in some
form. They come in every
conceivable shape and size
and are served in soups, with
meats and poultry and as
fruit dumplings. Dumpling
recipes, handed down over
the centuries in Czech fam
ilies, are closely guarded
secrets and are a vital part
of the young girl’s dowry.
The traveler in Czechoslo
vakia need never be lonely.
Czechs don’t like to eat or
drink alone, and there is
always someone to talk to

When you’re back home
you might like to try mak
ing that classic Czechoslovak
dessert, Palacinky:
PALACINKY
2 eggs
1 cup milk
1 cup flour
3 tbsp. sugar
pinch of salt
2 tsp. grated lemon rind
Beat eggs. Add milk, soft
flour, sugar, salt. Add to
egg mixture and beat thor
oughly. Fold in lemon rind.
Batter should be of very
thin consistency. Add ad
ditional milk if necessary.
Cover 6-inch frying pan with
small amount of butter.
Drop enough batter (about
2 tablespoons) into pan to
thinly cover surface and fry
over medium low heat, turn
ing once, until light brown
on both sides. Traditionally
served with apricot jam, or
fresh fruit, raisins, cottage
cheese, with sprinkling of
confectioners’ sugar on top.
You may find yourself
using one term the traveler
should know, although ad
mittedly the Czech language
is difficult to master. It’s
“Dobrou Chut,” the Czech
equivalent of “Bon Appetit.”

Most preparations that are
effective when bought do not
necessarily remain so indefi
nitely. After a period of time
they may become too weak,
too strong, or contaminated
with bacteria or molds. Phy
sicians and pharmacists refer
to the “shelf life" of a prepa
ration-meaning the product’s
time limit for efficacy and
safety.
It is a good idea to mark
each of the containers with
the date bought, and the
name of the family member
for whom the medication was
purchased.

Hominy makin’, corn
grindin’, board splittin’, and
mountain cloggin’ take center
stage August 6-14, 1976,
during the Georgia Mountain
Fair at Hiawassee, Ga.
Visitors wandering through
the Towns County High
School building will finger
delicate needlework and stop
to compare individual jars of
homemade preserves. The
exhibit of Indian relics will
surely recall the days when
Cherokee braves roamed the
rolling north Georgia terrain.
The replica of an old-time
mountain home is a highlight
of the Fair’s unusual midway.
(See if you can spot the
leather britches hanging from
a cabin nail.)
Every day of the fair
promises special features. On
opening day, August 6,
there’ll be two Country Music
Shows at 2 p.m. and 8 p.m.
complete with Nashville stars.
The Annual Georgia
Mountain Fair parade of
antique cars rolls off at noon
on Saturday. Spectators will
also see horses and buggies,
floats and marching bands.
The Saturday Cloggers
Convention brings foot
stompin’ and toe tappin’ by
cloggers of all ages at 10 a.m.
and 8 p.m.
Sunday’s the time for
gospel music beginning at 1
p.m.
Other special events during
the fair include Lion’s Club
Day on Monday with free
admission to all Lions. On
Tuesday, everyone in pioneer

and musicians.

continues with the best of the
hill country’s pickers and
singers in twTTbljfshows at 10
a.m. and 8 p.m.
Georgia’s most unique fair
celebrates its 26th season
August 6-14. Two other
fun-packed events are set
October 15-17 and October
22-24 when the Annual
Country Music and Bluegrass
Weekend brings hand
clappin’, pickin’ and grinnin’
to Hiawassee.
