On these hot afternoons we
are experiencing, lemonade
or iced tea out on the porch or
in a cool room is really
refreshing. I was visiting a
friend recently, sharing a
glass of lemonade with fresh
mint, and she had the tastiest
cookies. They are called
“Snickerdoodles”. These
cookies are crispy and go
perfectly with almost any
beverage. They reminded me
of old-fashioned tea cakes or
scones. Perhaps you would
enjoy adding this recipe to
your collection.
SNICKERDOODLES
1 cup soft shortening
2 3 4 cups sifted flour
1 egg
2 tablespoons sugar
2 teaspoons cinnamon
I‘a cups sugar
2 teaspoons cream of tartar
1 teaspoon soda
'a teaspoon salt
Mix together thoroughly
the shortening, Vz cup sugar
and egg. Sift together flour,
cream of tartar, soda and
salt. Stir into shortening
mixture. Chill. Roll into balls
the size of walnuts. Roll each
ball into remaining mixture
of sugar and cinnamon. Put 2
inches apart on an ungreased
baking sheet. Bake at 375
degrees for 8 to 10 minutes.
Yield: 5 dozen.
I found a good recipe for
Raisin Muffins. These are
delicately flavored, and good
for breakfast or any meal.
These can be baked ahead of
time, frozen, then heated for
breakfast. They beat frozen
doughnuts anytime.
RAISIN MUFFINS
4 cups all purpose flour
6 teaspoons baking powder
2-3 cup shortening
v 2 cup chopped almonds
2 beaten eggs
3 tablespoons honey
2 teaspoons salt
2 cups raisins
1 teaspoon grated orange
peel
1 >2 cups milk
TOPPING
2 tablespoons melted butter
> 4 teaspoon cinnamon
3 tablespoons brown sugar
dash nutmeg
Mix together flour, honey,
baking powdef, and salt. Cut
in shortening. Add raisins
and almonds, and orange
peel. Combine eggs and
milk-add to flour mixture.
This will fill 24 spaces in your
muffin tins, and make a
larger quantity of muffins.
Fill your greased tins 2-3 full
and bake at 400 degrees for
15-20 minutes. You may like
to cut this recipe in half, too.
For your topping, melt the
butter, and mix the spices
and sugar together. When the
muffins come out of the oven,
dip the tops immediately in
the melted butter, then in the
sugar mixture. Serve hot
with butter. If you choose to
freeze these muffins, wait to
add the topping until you
re heat the muffins.
