Day Care Center Begins
Third Year of Operation
The Jackson-Butts County
Child Development Founda
tion. Inc. recently began its
third year of operation. The
foundation was the organizer
of a Title XX Day Care
Center which is located in
Jackson on McKibben Street.
The center, started by
Reverend W. C. James, a
religious and civic leader of
the community, offers com
prehensive child care ser
vices for low income families
and eligible children referred
by the Department of Family
and Children Services.
The day-care center is a
non-profit organization and is
contracted through the De
partment of Human Re
sources. Ninety per cent of
the operating funds come
from the federal and state
governments and 10 per cent
is raised locally.
The first two years in
operation the center served
30 children but due to an
increase in the budget for
this year, an additional six
children will be admitted.
Memorial Fund
Honors Area
Nurseryman
A memorial fund honoring
the late Ralph W. Pennington
of Covington, has been
established through the
Friends of the University of
Georgia Botanical Garden.
The fund was established
by the family and friends of
Pennington, a nurseryman
and noted azalea breeder
who developed several vari
eties of azalea. He died this
year.
Money from the fund will
be used to develop and
maintain an azalea garden in
the Botanical Garden, a

the center since it was
opened. The members of the
staff are Mrs. Ruby Orr-lead
teacher, Mrs. Ella Allen,
Mrs. Glorine Thurman, Mrs.
Mary Taylor, Mrs. Roseman
Fears. Mrs. Catherine Nor
ris. and Gloria Fears.
Mrs. Salter has credited
the growth of the center to

Located in a brightly
colored building, center
officials have said the public
is always welcome to come
and pay a visit.

Pennington, a native
Georgian who was born in
1908, began a small nursery
in Decatur in the early 1950’5.
He moved to Covington in the
1960’s where he intensified
his azalea breeding and
testing work and expanded
his nursery operations.

Variety
Getting tired of the same
old vegetables? Feel like
you're beating around the
bush to disguise the same old
family standbys? Well, how
about something new and
different-maybe fried sweet
potatoes or parsnips?
Sound good? There’s more
in a booklet from the U. S.
Department of Agriculture.
It includes all kinds of
recipes and tips on cooking
vegetables, even some main
dish vegetable recipes. All
recipes list the calorie count
too. For your copy of

To fry sweet potatoes
or "parsnips, use about 3 cups
sliced or diced cooked
vegetable for 6 servings.
Heat 2 or 3 tablespoons
butter, margarine, or drip
pings in a heavy frypan over
moderate heat. Add vege
table and cook 5 to 10
minutes, or until lightly
browned. Turn them during
cooking to insure even
browning. For variety, add a
little diced onion, crumbled
bacon or diced ham.
To make sure your
vegetables look good and
keep their vitamins and
minerals, cook them only
until they are tender.
Vegetables cooked whole in
the skin retain most of their
nutritive value. If you want
to shorten the cooking time,
cut, slice, dice or coarsely
shred vegetables. And, the
less water you use the more
nutrients your cooked vege
tables will retain. For young,
tender vegetables, l/ 2 to 1 cup
of water is usually enough for
six servings.
Here’s a main dish supper
to bail you out when money is
short. It makes 6 servings of
1 cup each at about 295
calories per serving.
Potato-cheese bake
c> small onion, finely
chopped
3 eggs, beaten
'.4 cup milk
3 cups mashed potatoes,
seasoned
2 cups cheddar cheese,
coarsely grated
Preheat oven to 375
degrees F. (moderate). Mix
all ingredients. Pour into
baking pan. Baking 50
minutes or until the blade of

'Have Discharge
Papers Recorded’
Veterans Advised
ATLANTA - Veterans
who fail to have their dis
charge papers recorded are
placing themselves in a pre
carious position should they
ever file claims for certain
benefits or services and they
lose their original papers.
Georgia Veterans Service
Director Pete Wheeler said,
“Recording such important
papers is something a veteran
should do as soon as he pos
sibly can after discharge
from the military. It takes
only a few minutes and will
be done free by the Superior
Court Clerk’s office in the
county in which the veteran
resides.
A fire in the National Per
sonnel Records Center in St.
Louis destroyed thousands
of veterans’ files in July
1973. Wheeler said, “That
fire demonstrated how im
portant it is that veterans
have their DD-214 forms or
other Reports of Separation
recorded.”
Once the papers have
been recorded, copies can be
obtained whenever the need
arises. But if a veteran fails
to have them recorded, the
loss of the originals could
cause a serious hardship for
the veteran, his dependents
or survivors in their efforts
to file a claim.

recorded and put on perman
ent file.
