Not long ago, Walter
Carmichael asked me if I had
a recipe for lasagna with
spinach. He had tried this
casserole in an Atlanta
restaurant. I added spinach
to a lasagna recipe and was
pleased with the results. I
had to use frozen spinach
because there was no fresh
available in Jackson. Fresh
spinach would be more tasty;
and remember to cook the
spinach in a small amount of
water for 3-5 minutes, after it
has been cleaned.
LASAGNA FLORENTINE
TOMATO SAUCE
1 small onion, chopped
1 cup chopped fresh mush
rooms
1 one pound can of tomatoes
1 teaspoon basil
1 1 teaspoon thyme
2 tablespoons olive oil
1 clove garlic, minced
2 six ounce cans tomato paste
l teaspoon oregano
Saute' onion, mushrooms
and garlic in olive oil. Add
tomatoes and tomato paste
and seasonings. Also, add
salt and pepper to taste.
Simmer, uncovered, for 45
j minutes. Meanwhile, pre
[ pare lasagna noodles, spin
-1 aeh and cheese filling.
! CHEESE FILLING
I 3 cups creamy cottage
cheese
1 cup sharp cheddar, grated
2 tablespoons parsley flakes
2 teaspoons salt
1 pound mozzarella, sliced
thin
1 cup Parmesan, grated
2 beaten eggs
teaspoon pepper
Mix all ingredients, except
mozzarella chdese.
Layer noodles, tomato
sauce, cheese mixture, spin
ach and mozzarella cheese in
a greased 13” X 9” baking
dish. Bake at 375 degrees for
30 minutes. Let stand 5
minutes before cutting. It is
better made beforehand, and
reheated. This dish also
freezes well. This is a
delicious way to serve
spinach, which is full of
nutrients, to your family.

Miami, Florida where he had
been attending a meeting.

villa Lewis, a patient of
Sylvan Grove Hospital.
Miss Julia Keyes of Atlanta
and her sister, Evelyn Keyes
of California, visited another
sister, Mrs. J. R. Carmichael
and Mr. Carmichael last
week. The movie actress had
been in Washington, D. C. for
the inauguration ceremonies
for President Jimmy Carter
before coming to Atlanta and
Jackson. Miss Julia Keyes
returned to California with
her sister for a visit of a
month or more.
