THURSDAY, MARCH 17, 1977 Creative Cookery By Eilene F. Milam Chicken Pie is a favorite, especially when you make the crust, and all the ingredients are fresh. It is a meal in itself; just add some type fruit salad and dessert. EILENE S CHICKEN PIE Crust: (This recipe is very reliable) 2 cups plain flour '•j teaspoon salt Two-Thirds cup shortening : 10 and Two-Thirds table spoons ) 5-6 tablespoons cold water Sift flour and salt into large bowl. I've found it easier to mix in the shortening with my hand. Mix until mixture resembles corn meal or fine crumbs. Add water, one tablespoon at a time, until flour mixture is moist enough tostick together. Form into a ball, wrap with waxed paper and refrigerate 30A5 min utes. This pie crust also is great for other types of pies - apple, lemon, etc. The above measurements make a two crust pie. Pie Filling 4 chicken breasts 1 can chicken broth Stew chicken in broth until tender Remove chicken from bone and refrigerate. Set broth aside 3-4 carrots, cut into bite-size chunks 8-10 new potatoes, quartered Garden peas (as many as you feel like shelling) 1 lb. fresh mushrooms, sliced Wash and cut vegetables Cook peas, carrots and potatoes until tender. Set mushrooms aside. Meanwhile, take dough from refrigerator. Roll out two-thirds of it to fit an 8 X 12 2 quart casserole dish. Place dough in dish and prick it well. Set other dough aside. Bake crust at 375 for 10 minutes. Sauce Remaining chicken broth 3 tablespoons cornstarch Salt and pepper to taste I _■ cup half and half I I cup cream sherry Combine corn starch with a small amount of broth and add to the larger amount. Add remaining ingredients and cook over medium heat until mixture thickens and boils. Place cut up chicken, vegetables, mushrooms in the cooled pastry shell. Pour sauce over mixture Roll out remaining pastry, cut into strips and lattice top of pie. Bake at 350 degrees for 45 minutes or until crust top is golden brown. Serves 6.
