Food Preservation Budget.
HEALTH FIRST
Health is influenced very definitely
by the amount of fruits and vege
tables used in the diet. They pro
vide the minerals and vitamines so
necessary to health and are helpful
in maintaining the neutrality or
slight alkalinity of the blood and tis
sues. Milk, fruits and vegetables
are non-acid forming and tend to
neutralize acid in the system.
Requirements For The Family.
The requirements for the family
should be based on the following:
Vegetables, other than potatoes
and dried beans, should be served
twice daily; tomatoes at least three
times a week; fruit, once daily, and
eggs, at least once a day.
Since it is impossible to have it
fresh from the garden each day in
the year we must provide at least
one canned vegetable for each day
from November 1 to March 1, which
is 6 months or 26 weeks to supple
ment the one or two fresh vegetables
from the garden during the winter
| months.
How To Work Out Budget.
(According to Food Specialist.)
VEGETABLES—
Allowing one-half cup per serving
the following will be necessary for
one person over a period of 26 weeks:
Tomatoes, three a wsek 19 pts.
Corn, once a week 6 1-2 pts.
Peas, once a week 6 1-2 pts.
String Beans, once week 6 1-2 pts.
Soup Mixtures, once a week
-2 pts.
Making a total of 45 pts.
Then allowing additional 10 per
cent to take care of emergencies,
such as guests, breakage or spoilage,
three quarts should be added to this
amount, making 26 quarts or 51
! pints for one person over a period of
I 26 weeks.
I FRUITS—
Allowing one-half cup per serving
the following amounts will be neces
sary for one person over a period of
30 weeks:
Peaches, once each week 7 1-2 pts.
Berries, twice each week 15 pts.
Pears or cherries, once each
week 7 1-2 pts.
Apple sauce or plums .. 7 1-2 pts.
Allowing 10 per cent for emer
gencies, add two quarts to the above
amount. Twenty-one (21) quarts is
the allowance for one person pver a
period of 30 weeks.
Allowing one-eighth pound of dried
fruit per serving per person the fol
lowing number of pounds should be
supplied:
Peachese and figs 3 3-4 lbs.
Apples 3 3-4 lbs.
Total 7 1-2 lbs.
To find the amount needed for the
family, multiply the number of
quarts and pounds by the number in
the family.
EGGS—
It may be necessary during the
season when there is an abundance
of supply to preserve the surplus in
water glass for use when there is a
scarcity.
(2) Allowing an egg a day for
children, and two or three a week
for adults from September 1 to
February 1, 45 dozen would be need
ed. Adding one dozen per week for
cooking, 65 dozen would be needed.

IS THE TIME!
Feed Birds Mash To Get More Cash.
Increase the amount of mash feed
to the laying stock, while decreasing
the scratch allowance, and the usual
heavy drop in production during
August will be prevented.
Poultry specialists at the State
College of Agriculture make this rec
ommendation now, because it is the
’ time of year when hens are inclined
’ to take a vacation, with the result
' that there is a shortage of eggs
_ when the are in great demand. The |
eastern markets, as well as those in i
’ Cuba and Florida, show an increased :
’ demand during August, it is pointed ■
’ out, and a little extra care and at- j
tention to the flock at this time will
add materially to the income at a
’ dull season of the year.
The specialists advise that the
i scratch allowance be cut down to
• not more than seven or eight pounds,
• during August, while the amount of
I mash should be increased to fifteen
pounds per one hundred birds. A
" good mash, they say, can be made
1 from a mixture of equal parts of
wheat bran, wheat shorts, corn meal,
white middlings or red dog flour, and
’ meat scraps moistened with milk,
’ with three pounds of salt to 500 of
3 the mixture. Oyster shell or lime
stone grit should be before the hens
at all times.
All ventilators and windows should
be open at all times, and shade on
the range is essential. Cool fresh/
- water should be kept before the
r flock, and green food furnished if
: possible.
• Collect the eggs twice a day and
■ store in a cool place. The cellar is
• probably best.
• Don’t forget to cull the poultry
flock again early in August and get
• the producers separated from the
■ non-layers. It pays.
Arranging The Kitchen Will Save
> Many Step*.
> The old-fashioned kitchen, used as
3 a general utility and store room is
passing out rapidly and giving way
to the modern kitchen which is used
only for food preparation and serv
ing.
In a well planned kitchen there are ;
■' four centers from which the work of I
■ preparing meals is carried on, say
home improvement specialists of the j
Georgia State College of Agriculture, j
• They are the cooking center, with the
stove and certain necessary utensils; .
the food preparation center, consist-
• ing of the kitchen cabinet, the re-
■ frigerator and storage cupboard; the
! water center, with th'e sink, knives,
’ brushes, cans, and cleaners.
i The fourth center is not a work- :
ing center, but is just as essential.
I It is the rest center, and a comfort-
• able rocking chair with reading ma
-3 terial should be provided where the
housewife may ta a few moments of
• rest from time to time while waiting
• on the oven.
The well-planned kitchen has as '
' few doors as possible, so that as
’ much space as possible is saved. The |
i window area should be one-fourth of
the floor area. If the wall space is ,
limited, the window urea may be in- 1
• creased by placing the windows three
‘ or four feet from the floor, with the
i longest line parallel to the floor.
i Another suggestion made is to use
linoleum or similar material on the
r floor so that it may be kept clean
t easily. A hard wood floor is good if
> kept in condition.
