Creamed Sweetbreads- Make a white
sauce with two level tablespoonfnls of
butter; when melted add two table-
spoonfuls of Hour; stir until smooth;
then add three-fourths cup of milk and
stir until smooth; add u little pepper
and salt, a little cayenne pepper and a
slight grating of nutmeg.
Potato and Pepper Hnlad—Boll four
potatoes until tender; cut a green pep¬
per in half, take out the seeds and
chop the pepper line; mix thoroughly;
pour over one-fourth cupful of vinegar,
to which Is added half a tenspoonful of
sugar and two tablespoonfuls of water,
then pour over all two tablespoonfuls
of oil or melted butter.
Hominy Cakes—Mix one cupful of
cold boiled hominy with the yolks of
two eggs, one-fourth cup of milk, half
a cup of flour; beat the whites of the
eggs, then add them to the hominy
with one level teaspoonful of baking
powder; beat thoroughly and bake on
a hot griddle; serve with sugar and
butter or with maple syrup.
Stewed Mushrooms—Clean the mush¬
rooms; put them In the dinting dish
with a little boiling water; let simmer
live minutes; rub n little flour In a
litlle cold water anil stir until smooth;
1 lien add it to the mushrooms nml stir
carefully until thickened; season with
salt and pepper nnd add one-third cup¬
ful of cream; serve on buttered toast.
Klee Gems—Beat two eggs until very
light; add to them one pint of milk,
one and one-half cupfuls of Indian
meal, one tnblespoouful of salt, one
tablespoonful of blitter, melted; one
cup of boiled rice and three level tea-
.spoonfuls of baking powder; pour Into
greased gem pans anil bake In a quick
oven twenty-live minutes; serve very
licit.
< Cheese Drops—rut three-fourths of
n cupful of water in a small pan; when
It Is boiling add one tablespoonful of
butter nnd three heaping tnblespoon-
fuls of flour; stir this very rapidly;
.when a thick paste remove It from
the fire and add two eg;s unbeaten,
one by one, beating well after adding
each; drop tho dough In lumps from
the teaspoon on n buttered pan; brush
them over with beaten egg nml sprinkle
thickly with grated cheese and (lust
with cayenne pepper; put in a rather
quick oven and bake fifteen minutes;
serve hot.
Cream of Green Fens—To a ean of
green pens, less half a cupful, add
three cupfuls of chicken broth, or a
rich stock of any kind, and simmer to¬
gether about fifteen minutes. Melt
a fourth cupful of butter; when
bubbling, add a fourth of a cup of
flour; stir over the fire until well
blended, then add the peas and let
boll a few minutes. Rub the mixture
through a sieve, return to the original
kettle, nnd, when boiling well, add the
half a cupful of pens which had been
reserved, three cupfuls of hot milk nnd
unit and pepper to season. Wheu the
boiling point is ngaln reached, stir in
lightly a cupful of whipped cream, nnd
serve at once with croutons or wafers.
This Is a delicious soup, appropriate
equally for either ordinary or formal
occasions.—What To Eat.
