BAKING POWDERS.

The public i» always responsive to
suggestions about the food it eata.
Great interest baa been taken in the in
vestigations made byjthe United States
and Canadian governments and by the
different boards of health to show the
pnrity or Imparity of milk, baking pow
ders, spices, and other artiole* of dally
use in' the oulinary department of onr
households.
Just now the subject of baking pow
der is claiming publlo attention. Wo ail
desire pure and wholesome£bread and
this cannot be had withjthe use of im
pure or poisonous baking powder. There
can be no longer any quesUon that alt
the cheaper lower grades of baking pow
ders contain either alum, lime or phoe-
phatloacid.
The official analyses by the United
States and Canadian governments have
therefore been studied with Interest and
have pretty oleariy established the fsets
upon this subject. The United Statee
government report gives the names of
eighteen well-known powders, some of
them advertised as pure cream of tartar
baking powders, that contain alum.
The report shows that the|Royal bak
ing powder was found; the highest in
leavontng strength, evolving 100.0 oubio
inches of gss per single ounce of pow
der.' Thera were eight other brands of
cream of tartar powders tested and their
average strength;was 111.5 cubic luehes
of gss per ounce of powder.
The Canadianfgovernment Investiga
tion* were of ajjstlU larger number of
powders. The |Boyal baking powder
was here also shown the purest and
highest ip strength, containing 12032
cubic inches of leavening gas per ounce
of powder. Nine other eream of tartar
powders were tested, their Sverige
strength beingjreported to be 80 oubio
inches of gasjper ounce.
These figures are very instructive to
the practical (housekeeper. - They Indi
cate that the Royal baking powder goes
more than.|33 per {cent further In use
than the others, or is one-third more
economical.^Still more important o**"
this, however, theyjprove this popular
article hasjbeeu brought to the highest
degree of purity—for to its superlative
purity this; superiority in strength is
due—and consequently that by Its use we
maybe insured the purest and most
wholesome food. -A r * *'. : _ *
The powders of the lower strength are
found to leave large amounts of inert
matters in the food. This fact Is em
phasised byjtlie report of the Ohio State
rood Commissioner, who, while finding
the Royal practically pure, found no
other powder to contain less than 10 per
cent of Inert or foreign matters.
The publio interest in this question
baa likewise caused to be made invest!-,
gatlons by our local authorities. Prof.
W. S. Haines, of Rush Medical College,
consulting chemist of the Chicago board
of health, has found results similar to
those reported by the national and Can
adian antborltiee. Dr. Halnee saya:

Ill.—I hare recently obtained samples of
the ohlef baking powders lit the market,
and have subjected them to careful
chemical examination to determine their
purity, wholesomenese and leavening
powers. As the result of my test I find
the Royal baking powder superior to all
the others in every respect It le en
tirely free from all adulteration and un-
wholsome impurity, and in baking it
gives off a greater volume of leavening
gaa than any other powder.' It is, there
fore, not only the purest, but also the
strongest powder with which I am ac
quainted.

The statistics show that there is used
in the manufacture of the Royal baking
powder more than halt of all the cream
of tartar oonsomed in the ’Jolted States
for all purposes. The wonderful sale
that indicated for the Royal baking
powder—greater than that of all other
baking powders combined—Is perhaps
even a higher evldenoe than that already
quoted of tbo superiority of this article,
and of its ladlspensableness to modern
