ISSUED HI AWNM
New rules and regulations nave been
formulated for the conduct of bakeries
and cracker manufacturers through

1 more than 80 per cent of his 1917 con

‘ 2(- per cent of other products.
’ The new rules were formulated at
1 a recent meeting held in Washington,
; and in a statement given out by food

I “Bread bakers will be allowed for
the first six months 80 per cent of

“The food administration requests
that all bakers produce as many va
rieities as possible of wheatless
breads, crackers and cakes and to pro
mote, advertise and encourage the use
thereof.
“No cracker baker can use for short
ening in spone goods, a greater pro
portion than 50 per cent of animal
fats.
“The food administration has ruled
that cracker bakers, in filling govern
ment orders for crackers, hard breads,
etc., must fill them from the percent
age of wheat flour that they are per
mitted to bake in 1918.
“This will, from a commercial point
of view, not make government con
tracts particularly desirable, but
naturally all cracker bakers will take
pleasue in giving government wants
first consideration.
“The government is now considering
the advisability of allotting hard
bread business in one-half-pound and
24-pound sealed tins for use in the
trenches and navy.
“These new regulations are effec
tive January 21 and supersede all pre
vious regulations covering flour, fats
ana sugar.”
