COTTON SEED
“OLIVF OIL.’
Difference Between it and the Genuine
Article Difficult to Detect.
If it weren’t for the influence
of a name and a tradition, Amer¬
icans would not send money
abroad for the cottou se :d oil
manufactured at home. But to
please the American imagination
says the Jacksonville Times
Union,it must go abroad to be
labeled •‘OiiveOil” before they
will use it in their salads or for
other uses the alleged olive oil
it put to. If it were bought at
home for one thing, it would be
too oheap, It is the price of
"olive oil” that makes it dear to
the epicu e. No tar.IT laws can
shield us from the impositions
put upon us, for exporters can¬
not detect the difference between
cotton seed oil and oli ve oil, it
is asserted. One is just as nu~
tritous and tastes as well as the
othei when refined. Both are
bland vegetable oils, free from
any harmful effect upon the sys¬
tem. Cotton seed is well boiled
before the oil expressed from
it. The oil is immeasurably
superior i.o hog’s fat for culina¬
ry purposes. It can not but be
wholesome. While lard can only
be if the hog was free from
disease when killed aud no one
can know that when purchasing
lard. When cotton seed oil is
transformed into butter it makes
a product superior to most sub¬
stitutes for cow’s butter. Nev
tlieless, great quantities of
Southern products will continue
to be 6ont abroad, aud Americans
pay expense
of transportation both ways and
a good-sized protit to the foreign
handler in order that ho may be
L-jatedr He ii'aes to be fooied.
Even when he knows that it is
impossible to manufacture from
pure olives all the olive oil sold
he will not take ihe hint. He
doesn’t want to. He is above the
weakness of a patriotic desire to
patronize home products. He
wants the brand; never mind
what the stuff is.—Manatee,
