In the kitchen with Lois Leslie

Cooking brings families and
friends together to share meals and
good stories and one Talking Rock
lady recently shared some of her
best recipes for our readers.
Mrs. Lois Leslie, a military wife
who has collected recipes from
friends all over the country, enjoys
cooking and, even better, sharing
her food with friends and family.
“Many of these recipes are good
for young mothers who don’t have
a lot of time or who need to make
things ahead of time,” she said.
Many of the following recipes
can be made to take any place
where friends gather and are in
need of potluck food.
“When my children were young
and in school, I used to make can
died peanuts and wrap them up in a
cupcake wrapper to send to their
teachers at Christmas or Easter as a
homemade treat,” Mrs. Leslie said.
“The teachers loved it because it
was a personal treat and not some
thing that was just bought.”
Some of her recipes are very
popular, she said, especially the
recipe for “Death By Chocolate”, a
personal favorite of many of her
family members and close friends.
“I have taken that recipe to so
many parties and to Christmas din
ners,” she said. “These recipes have
gone from hither to yon.”
Mrs. Leslie said she loves
recipes that can be made ahead of
time in case company is coming
over and you don’t want to mess up
the kitchen.
The pizza recipe that follows is
one example that can be prepared
early.
“I’ve had it for bridge parties
and it’s wonderful. A square of that
pizza and a salad is all you need for
a meal,” she said. “It calls for
shredded cheese and I just love the
fact that you can buy the cheese
shredded in the grocery store now -
we used to have to shred it our
selves you know.”
Candied Peanuts
Two cups sugar
Four cups raw peanuts
Half cup hot water
Put sugar in pan, pour half cup
of water into the sugar, stir till sugar
is melted. Dump peanuts into mix
ture, stir constantly or until peanuts
are completely covered with mix
ture. Stir as needed to keep from
scorching.
Cook until all water is cooked
out and peanuts are coated with
sugar.
Spread in rectangular pan or
cookie sheets with sides & bake in
a preheated 300 degree oven for 35
- 40 minutes. Stir peanuts when you
take them from the oven.
Upside Down Pizza
2 pounds lean ground beef
2 large eggs, slightly beaten
1 jar (15.5 oz.) pizza or spaghetti
sauce
2 cups shredded cheddar cheese (8
oz.)
8 ounces Mozzarella cheese, sliced
(or shredded)
1 can (8 oz.) refrigerated crescent
dinner rolls
Heat oven to 350 degrees. Have
a 13x9x2 inch baking pan ready.
Brown beef in a large skillet over
medium heat, breaking up meat
with a wooden spoon. Remove
from heat; drain off excess fat and
let stand 3 to 5 minutes to cool
slightly. Add all but 1 tablespoon
of the eggs to beef, then stir in
sauce until well blended. Spread in
ungreased baking pan. Sprinkle
with Cheddar and arrange (or sprin
kle) Mozzarella on surface. Firmly
press edges and perforations to seal.
Roll to form a 13x9 inch rectangle.
Place over cheese and brush with
reserved beaten egg. Bake 20 min
utes or until beef mixture is hot and
crust well browned. Let stand 5
minutes before cutting into squares.
Makes 8 regular or 12 buffet serv
ings.
Chicken and
Dressing Casserole
6 medium chicken breasts
1 stick butter
1 package sour cream (8 oz.)
1 can mushroom soup (undiluted)
1 package herb stuffing
3 cups chicken broth
Boil chicken until tender, save
broth. Remove chicken from bones
and line 9x13 greased baking dish
with chicken. Mix soup and sour
cream and spread on chicken. Melt
butter and mix with chicken broth;
add to stuffing. Spread stuffing mix
on top. Bake at 325 degrees for
about 45 minutes. Makes about 12
servings.
Death by Chocolate
Serves 12-15
1 (19.8 oz.) family size fudge
brownie mix
1/4 cup Kahlua
2 (3.5 oz.) boxes Jello chocolate
instant pudding
8 (1.2-1.4 oz size) Skor or Heath
candy bars
2 (8 oz.) whipped topping
Bake brownies according to
package directions, cool, punch
holes in brownies (while warm)
with fork. Pour Kahlua over brown
ies and set aside. Make Jello choco
late pudding according to box
directions. Break candy into small
pieces (hit with hammer while still
in wrapping). Crumble 1/2 of
brownies in trifle bowl and then
layer 1/2 of pudding, candy and
cool whip on top and then repeat
with remainder of ingredients.
Make a day ahead and keep refrig
erated.
Potato Casserole
2 lb. package frozen hash brown
potatoes, thawed
1/2 c. soft butter
1 can cream of chicken soup
2 c. grated cheddar cheese
1 tsp. salt
1/4 tsp. pepper
16 oz. sour cream
1/2 c. chopped onion
Topping: 2 c. corn flakes (crushed
before measuring), 1/4 c. softened
butter
Put all ingredients in large bowl
(except topping). Toss until well
mixed and place in 3 qt. Pyrex or
13.5 x 8 3/4 x 1 3/4 inch casserole;
sprinkle on topping; let set
overnight and take out about 30
minutes before cooking. 45-50 min
utes at 350 degrees. Serves 10-12.
Must do ahead. Calorie count - way
up there.

Jasper Rotary
Update
Lloyd Zook, Goshen Valley
Boys Ranch Executive Director,
spoke to the Jasper Rotary Club
about the ranch located about 7
miles outside of Jasper. The ranch
has 150 acres and leases 200 acres
from the state government. John
Blend, an Atlanta business man,
was led to establish the ranch for
young people. The ranch has been
in operation for a year and a half
and presently has 6 boys, and calls
come in daily from case workers
around the state who want to place
a young person at the ranch.
Zook said that they try to get
these boys before the age of 16 and
hope to positively impact their lives
so they are prepared to enter the
world when they attain the age of
18.
They recently broke ground for
three more houses, to house 18
more young men. House parents
will be hired for each house.
