In the Garden.. ..
At the Steakhouse

Azaleas have hit their peak and
perhaps no where in Pickens Coun
ty have they put on a show like the
Jasper Family Steakhouse. If you
visited the garden dining room,
you could not help but notice the
deep red azaleas lining the back of
the gardens like a hedge.
With more than 60 mature azal
eas blooming together, the display
is spectacular as the first of the
owners’ planned garden displays its
blooms this spring.
As the azaleas fade, Elizabeth
Suber and her husband Salem, who
has owned the restaurant for the
past seven years, plan for an entire
season of interest for diners. With
flowering trees, shrubs, perennials
and an assortment of annuals and
roses, there will be something
blooming all spring and summer.
Elizabeth, a master gardener
from Atlanta, worked for three
years as an estate gardener at a
home along the Chattahoochee
River. Now she finds herself taking
care of her home garden as well as
the garden at the steakhouse. Hem
locks Landscaping, run by Ross
Fletcher, helps maintain the gar
dens.
"The azaleas are wonderful this
year," Elizabeth said. "With the
white and pink dogwoods overhead
it just signals springtime."
As with most gardeners, Eliza
beth works to make sure there is
something in bloom from spring
through the fall. To get the desired
effect, she said, trees and shrubs are
blended with perennials and ever
green foliage plants to provide an
array of gorgeous blooms.
"The crepe myrtles bloom in
July and there are hydrangeas,
roses and rhododendron combined
with the perennials to have some
thing showy most of the time," she
said.
In the perennial bed, there is
phlox, lamb's ear, yellow coreopsis,
astilbe and painted daisies.
"I love the painted daisies -
they're just a rainbow of daisy col
ors," Elizabeth said.
The astilbe features soft, feath
ery flower plumes that bloom from
June to August. Elegant fern-like
foliage provides a pleasant green
accent and the plant does well in
most any soil. Astilbe will thrive in
shade but also grows well in full
sun if it is kept watered.
Daisies offer prolific blooms
from spring to summer and like full
sun with medium to low watering
requirements. These are a favorite
perennial for many gardeners and
are great for naturalizing in a wild-
flower garden, meadow or another
low-maintenance location.
"My perennials all bloom at dif
ferent times and I fill in with annu
als to have something blooming all
the time," Elizabeth said.

plant because of its carefree main
tenance. They have earned the
nickname the lazy gardener's
flower because once planted, they
will flower and multiply with little
care. Once their blooms are gone,
the fan-shaped foliage stays in the
landscape throughout the growing
season.
In addition, the garden boasts
the summer bloomers of St. John's
Wort (Hypericum), ginger, yarrow,
Black-Eyed Susans, sedum, and
aster for fall color.
"The ginger is like a canna - it is
tall and bold and this one has a
white bloom - it's delicious," she
said.
Many of her featured plants are
tried and true hardy plants that are
disease resistant but others she says
are worth the effort.
"The yarrow, for instance,
spreads like crazy but it is suscepti
ble to disease. It gets a powdery
mildew around the base but it has
beautiful blooms."
Another plant that takes effort to
keep looking beautiful but, Eliza
beth says, is well worth it, is the
rose.
"We have one rose bush here
that's been here probably 10 or 15
years but some of the others have
been given to Salem by his employ
ees and I've purchased a few," she
said.
Many of the selections at the
steakhouse are hybrid Tea roses.
Selections include the white-flow
ering Dolly Parton Rose and the
gold Midas Touch.
"My main goal was to have all
different colors of roses - reds, pur
ples, whites," Elizabeth said.
"Roses are high maintenance but
they are so pretty."
The key, she says, to rose main
tenance is spraying them with an
insect and disease control product.
"I spray my roses at home and at
the steakhouse every 10 days," she
said.
According to garden experts,
Alba roses may be the perfect
starter rose for those leery of the
plants that are prized for their
blooms and fragrance but feared for
their reputation. These roses are
cold hardy to Zone 3 or 4 and heat
tolerant to Zone 8 and are the most
rugged, shade-tolerant and disease-
resistant antiques. They make
attractive upright shrubs, densely
covered with bluish green leaves
and typically grow from four to six
feet tall, making them suitable for
the back of the border. They pair
well with clematis vines, peonies,
iris and bell flowers.

resistant and compact. In this cate
gory you will find Polyantha, or
sweetheart, roses. When planted in
groups of three to five they behave
like a drift of perennials. They
require pruning in spring and shear
ing after each bloom period. Fertil
ize these shrubs in spring and again
after the June flowering. They com
bine well, according to some
experts, with lamb's ears, cranesbill
geraniums and blue salvia.
This year, Whispering Springs
Nursery, located on Cove Road, is
adopting a perennial and annual
bed at the steakhouse and will fill it
with beautiful seasonal flowers.
