Happy Ramblers
Just step inside the door to the
community room and you could
see it’s Halloween time! Every
thing was decorated so pretty
with all the bright orange, yellow
and red colors of fall. Just made
you feel good to see all this along
with the bright welcome smiles
coming from Pete, Prentice, Car
olyn and Peggy, our hostess for
this month’s meeting.
We took care of some of our
business items before time for
lunch. We had ham, chicken,
turkey and dressing, green beans,
baked beans, peas, com, okra,
pasta salad, sweet potatoes,
chocolate pound cake (made by
Ruth Gibson so you know how
good it was), old fashion choco
late cake, apple pie, pecan pie,
key lime pie, coconut cake, dif
ferent kinds of cookies and this
sure doesn’t cover everything
just what comes to mind while I
am writing.
The parade of costumes was
next. There was the Lone
Ranger, Cat in Hat, Progressive
sales girl, Groucho Marks,
Queen of Hearts, Fortune Tellers,
Indiana Maiden, Flower Girls,
Minnie Pearl, Old Mother Hub
bard, to name a few. We may be
older but we know how to have
fun!
We had Bible reading, prayer,
announcements and later Bingo
where everyone won prizes.
Door prizes were big potted
Mums. The roll was answered
with a Halloween memory: live
ghost swinging out of tree scared
mom but not the child; mom for
got it was Halloween and didn’t
have candy so the “trickster”
gave the mom candy; husband
couldn’t ever recognize that she
was in costume; another husband
asked, “Is anyone else going to
be dressed like that!”; 2 small
children came to door when little
one said trick or treat, big one
punched him said, “No, I was
going to say trick and then you
would say or treat!”; big trick or
treater, real ugly, wouldn’t say a
word just grunt and hold out bag.
Lady was scared of him told him
she wasn’t giving him anything
and to get away from her house,
she then heard giggling from her
grandkids who were hid in the
shrubbery. It was hers son!
Happy Halloween to all from
the Ramblers to each of you!

1234 Lemon Cake With Sylvia Riley
3 cups sifted all purpose flour, plus more for pans

4 large eggs, lightly beaten
1 1/4 cup buttermilk
1 1/2 tsp. vanilla extract
2 lemons, zest only
3 cups of lemon curd - see recipe
Confectioners' sugar for dusting
Heat oven to 350. Arrange racks in center of oven. Butter two 8”X2” round cake pans, line bottoms with
parchment paper. Dust bottoms and sides of pans with flour; tap out excess. In a large bowl, sift together flour,
baking powder, baking soda, and salt. With electric mixer fitted with paddle attachment, cream butter on medium
speed until softened, 1-2 min. Gradually add sugar, beating on medium speed until lightened, 3-4 min. scraping
sides as needed.
Drizzle in eggs, a little at a time, beating after each addition until batter is no longer slick, about 5 minutes,
On low speed, alternately add flour mixture and buttermilk, beginning and ending with flour mixture. Beat in
vanilla and lemon zest. Divide batter evenly between the prepared pans.
Bake 25 minutes, then rotate the pans in the oven for even browning. Continue baking until a cake tester in
serted into the center of each cake comes out clean, 10-20 minutes more.
Transfer pans to wire racks to cool, 15 minutes. Turn out cakes; set on racks, tops up, until completely cool.
Remove the parchment from bottom of each cake. Using a serrated knife, slice each layer in half horizontally.
Set aside the domed layer for the top of the cake. Place another layer, dome side down, on a serving platter.
Spread 1 cup lemon curd oer surface to within 1/2 inch from edge. Repeat with all layers.
Top with the saved dome and remaining curd. Transfer cake to the refrigerator. Dust the cake with powdered

over medium-low heat, stirring constantly, 10-15 minutes or until mixture thickens and coats spoon.
NOTE: Do not let the lemon curd boil, as it can cause the mixture to curdle. Remove from heat. The lemon
