Mercer spotlights 2014 PHS Salutatorian
2021 Prom Queen and King
Former PHS student
Haley Matthews was fea
tured as student spotlight at
Mercer University School of
Medicine, where she is in her
first year of med school.
“Haley chose MUSM be
cause the school’s mission to
promote well-educated
physicians in rural areas is
near and dear to her heart.
After graduating from Emory
University in 2018, Haley
worked as an ophthalmic
technician in a small, rural
town. There she understood
the importance of promoting
health in locations where
there are limited health re
sources.
Haley fell in love with
ophthalmology while work
ing in the field, and she has
also enjoyed learning about
neurology. She is considering
both specialties as well as
having an open mind for oth
ers. Haley’s largest career as
piration is finding the exact
specialty that feels like she
can make the most difference
while also just feeling ‘right.’

Emma Long received the 2021 Beta Eta Chapter of Delta
Kappa Gamma $1,000 scholarship. This scholarship is
awarded to a young woman graduating high school who in
tends to pursue a career in education. Ms. Long’s education
goal is to teach middle and high school agriculture educa
tion. She plans to attend Oklahoma State University. Beta
Eta is local chapter Delta Kappa Gamma, an international
honor society of women educators.

Pendley Family Reunion
The Pendley family reunion planned for June 6, 2021 at
Amicalola Falls State Park will be cancelled due to the
COVID virus still spreading in our community.
We hope to plan for next year.
Roper Reunion
The Roper family reunion will be held June 6th at 1 p.m.
at Amicalola Falls, Table #4.

Iron Gait Percherons Draft horse Sanctuary will hold a
BBQ and bonfire fundraiser on May 15 from noon to 5 p.m.
The event will feature Percheron pony rides for all ages,
live music by Cure My Enemy and personal readings by The
Front Porch Connection. Join us in celebrating the 10th an

Acoustic Blends Friday, May 21
Bring your own chairs for the musical event. Friends of Har
rison Park of Ellijay presents the return of Acoustic Blends,
featuring local musicians. The musical event will be held Fri
day, May 21st at 5:30 p.m. at 75 McCutchen St., Ellijay.
Free admission (donations accepted). There will be food

play as she has wanted, but
whenever she has the oppor

and arranging four-part bas

nals. She has been working
on a project where she
records herself playing all
voices independently, and
then edits them together in a
small video with all voices.”

Brianna Simpson and Sy Chadwick were crowned the
2021 Pickens High School Prom Queen and King.
Prom Queen Senior Brianna Simpson is the daughter of
Adriana Nogareda. She will be attending Reinhardt Uni
versity with an academic and volleyball scholarship.
Prom King is Senior Sy Chadwick. He is the son of
Shane Chadwick. Sy plans to continue working following
high school pursuing a career with the power company.
Congratulations Brianna and Sy.

Kate Quinton, Part II
My mother, Kate Quinton, wrote many lovely poems and
just deep, meaningful writing that she left behind. Oft times,
they were just written on scraps of paper, but how precious
those scraps of paper are to me now. Hope you enjoy this one.
Springtime

I see beauty in the summer
In the winter and the fall,
But give me awakening springtime
Yes, I love it best of all!
Mother Nature has slumbered
Through winter s ice and snow so deep
Now with gentle breeze comes skipping
Calls her children from their sleep.
And each tree, each plant and flower
Starts to working right away
And they paint the hills and valleys
Changing them from day to day.
And the brooks down in the valley
Goes laughing on it’s merry way
Telling all that stops to listen,
“Spring is back with us today! ”

The Pickens County Coin Club meets the first and third
Tuesdays of the month at 5:30 p.m. with an auction starting
at 6:30 p.m. at Cornerstone Church, 140 Cornerstone Dr.,

Quick & Easy
Baked Fish with
Parm Herb Crust
4 white fish fillets about 6-oz. each, (like
flounder, cod, tilapia, halibut, etc.)
1/2 cup fresh bread crumbs preferably
homemade
1/4 cup grated Parmesan
1 tablespoon chopped parsley fresh - if
using dry only 2 teaspoons
1/4 teaspoon each: basil oregano, and
thyme
1 clove garlic minced
1/4 teaspoon freshly ground black pepper
2 tablespoons olive oil divided
Heat oven to 400 degrees.
Oil a 9" x 13" baking dish. Arrange the fish
fillets in the dish, folding any thin parts
under to avoid overcooking -some fish, like
tilapia, might need to be folded in half if
they're really thin- the idea is to try to make
them the same thickness to cook in the
same time frame.
In a small bowl, mix the bread crumbs,
cheese, garlic, herbs, and pepper. Stir in 1
tablespoon olive oil to moisten.
Divide the crumb mixture evenly over
the fillets. Drizzle or spray with the remain
ing tablespoon of olive oil.
Bake until the topping is golden and the
fish is opaque when flaked, about 10-15
minutes, depending on the thickness of the
filets.
