Stillwater, Oklahoma -
Pickens County student,
Emma Long, was recently
honored by the Oklahoma
State University Ferguson
College of Agriculture with
an academic scholarship for
the 2021-2022 academic
year.
The scholarship is part of
the more than $1.8 million
that students will receive
from the college and its aca
demic departments. Students
from all majors are consid
ered for university scholar
ships, which can be
combined with college and
departmental opportunities.
“We are fortunate to have
many students in the Fergu
son College of Agriculture
who are actively engaged and
impacting others,” said
Cynda Clary, Ferguson Col
lege of Agriculture associate
dean of academic programs.
“It is an honor and a privilege
to award scholarships to help
fund their college experience
and celebrate the contribu
tions they have made to our
college and departments.
These scholarships would not
be possible without the gen
erosity of our alumni and
friends, and we truly appreci
ate their investment in these
students and their develop
ment.”
Long is an animal science
student from Jasper, Georgia.
They received the Joseph
Fleming Memorial Freshman
Scholarship.
The Ferguson College of
Agriculture believes in the

Coin Club Group
The Pickens County Coin
Club meets the first and third
Tuesdays of the month at
5:30 p.m. with an auction
starting at 6:30 p.m. at the
Amicalola Electric Center’s
Dean Center at 544 Highway
515 in Jasper.
The club is also planning
a Coin Show on Saturday,
July 31 at the Dean Center.
The coin show will be open
to the public, free parking
and admission starting at 9
a.m. to 4 p.m. They provide
opportunities to interact with
the public, discuss coin col
lecting with "YN's" young
numismatists, provide ap
praisals and to buy and sell
coins.
All ages welcome and you
don't have to be a member to

Fun and Games
Everyone knows how
close of a friendship we have
always had with the Rays.
The younger generation
didn’t know if we were just
friends or family. My grand
son went to Edward’s for
Halloween (they only went to
five or six houses). He al
ways bought them the real
good candy. They always had
their birthdays at Howard’s.
He kept popsicles for them
and set on the back of the
creek. When they floated by,
he would hand them one of
the popsicles. While in
Florida, they went out to eat
and the waitress asked if they
liked the ocean. Devon said,
“Yes, it’s alright but it’s not
near as good as Howard
Ray’s creek.”
We spent the weekend to
gether for what we always
called “Fun and Games.” I
could never tell enough for
you to know how much fun
we had. We played Rook,
Canasta, Rummy, Spoons

Spooky’ Crafternoon

Children are invited to

Texas.” We also had other lit
tle funny trick games like
Hands on the Wall where
everyone was facing the wall
and we would make a big
deal about getting your hands
placed just so-so. Then we
would say, “Repeat after me”
and “hands on the wall” and
they would repeat that then I
would say “that is all.” They
you’d just turn and walk
away.
We had just a truck load of
trick games. We played until
close to 12:00, got up early,
cooked a big breakfast - ham,
gravy, biscuits, grits, eggs,
cheese and fruit and home
made jams and jellies. We
plays a few slower games
and those that could eat any
thing else would have a sand
wich.
We would start for home
with out minds full of happy
thoughts. To have a whole
family as close as we are with
the Rays is an uncommon
thing, but I would take noth
ing for our friendship.

Kathy’s Home Sweet Home
Put some south in your mouth

ing ramble
from the
porch
I woke
up early and got my bread in
the oven. I’ve finally found a
routine that works. Make on
Saturday, rise all night, bake
early Sunday morning so the
house smells good. It does
smell so good baking. The
mister wanted just hot sour
dough bread, butter and
homemade wild blackberry
jam for breakfast on the
porch. So that’s just what he
got.
I had enough red cayenne
peppers from Saturday’s
picking for two jars of pepper
sauce. After all, it’s collard
green and turnip green sea
son. Pepper sauce is a must
for those.
I’m continually amazed at
what Mother Nature provides
for us to enjoy from our gar
den and bees. This sunshine
is so welcome. We want to
hike but Joey is nursing a
bum knee and me a wonky
foot so uneven terrain is a no
go. But, Gibbs Gardens has
an amazing display of cos
mos and wildflowers and
that’s an easy walk, so maybe
we’ll do that.
We sat on the porch
watching the birds, bees and
squirrels after the early morn
ing fog lifted. I miss my gar
den view. Joey already
cleaned off everything but
my pepper patch and zinnia
garden. I do miss our hum
mingbirds. I think they
must’ve left out Friday as
I’ve not seen them since then.
I always whisper a little
prayer for their safe travels
and return here next year.
You know, the same ones re
turn each year. They have

Joey worked all day yes
terday feeding bees and said
they all appear healthy and
happy. We are hopeful they
all survive winter. They are
out and about today after a
long week of rain. A couple
enjoyed the leftover jam on
our plates.
There really is no place
like home. And God is good.
Kathy and her husband Joey
are native Pickens Countians.
Kathy, a Registered Nurse, is a
mother, gardener, bird watcher,
baker, cook, reader, audio book
lover, camper, traveler, and jam
and jelly-maker. She and her
husband enjoy beekeeping and
Jeeping and don't watch TV.
Kathy will have an occasional
column in the Progress.

Roasted Vegetables
with Pumpkin Spice
Balsamic Vinegar
Vegetables
1/4 cup Rooster’s Market Tunisian House
Blend EVOO
1 large sweet potato, peeled, halved and cut into
1-inch pieces ***
2 large carrots, sliced into 1/2-inch rounds ***
1 medium red onion, cut into 1 inch slices ***
5 garlic cloves, smashed ***
1 tablespoon thyme, chopped
salt and pepper
Vinaigrette
1 teaspoon Rooster’s Market Dijon Honey
mustard
1 small shallot, finely chopped
2 tablespoons Rooster’s Market Tunisian
House Blend EVOO
2 tablespoons Rooster’s Market Pumpkin Spice
Balsamic Vinegar
salt and pepper
Preheat the oven to 425 degrees Fahrenheit.
Line a baking sheet with foil.
Combine the olive oil, sweet potato, carrots,
onion, garlic and thyme in a large bowl.
Season vegetables with salt and pepper lib
erally then spread across the prepared baking
sheet.
Roast until the vegetables are tender and
turning golden brown, around 40 minutes turn
ing halfway through.
Mix all of the vinaigrette ingredients in a
small bowl.
Transfer roasted vegetables to a serving dish
and toss with the vinaigrette.
