The federal Rural Electrification
Administration is sponsoring a plan '
which would make it possible for the !
local rural schools to establish electri
cal food processing centers, says C.: i

and other participating agencies heard
REA officials and others stress the
danger in lack of protective foods es- 1
pecially during periods of national
emergency.
The proposed centers would be 1
equipped for regrigeratiton of foods,
cooking, baking, canning, preserving, i
dehydrating fruits and vegetables, and
grinding home-grown whole grain, j'
This would make hot school lunches 1
possible in schools where they have
never been available before. The; i
equipment could also be used by the j!

economics teacher, and others who
wish to give demonstrations or con- 1
duct adult education. 1

The plan for locating these centers
jin rural chools and other community
centers is part of the general program
for better diets nd the use of vitamin
! content foods. Particular stress is
placed on the use of meat, eggs, but

| tables, and whole wheat flour.
The installation for a school of mod
erate size may include a refrigerator,

mill. This would be sufficient foi
carrying out the basic operations of
food preparation and demonstrating
