An easy way to roast pea
nuts is to spread the shelled
peanuts one layer deep in a
shallow pan and heat in an ov
en at 300 degrees F. for 30 to
45 minutes. Stir often as they

nuts. If salted nuts are desir
ed, cool the roasted nuts and
slip off skins by rolling be

finger. Add one teaspoon of
butter or margarine per cup
of peanuts and stir over low
heat until all nuts are coated
and warm. Then spread nuts
on paper towel and sprinkle
with salt-
Peanuts are high in calories
since they are high in fat
content. They are more nutri
tious than many other foods
| eaten as snacks. However, we
eat few peanuts in compari
son with other foods. Peanuts
!and peanut products are ex
cellent sources of protein and
when used in a mixed diet,
which contains milk and eggs,
they serve as an excellent low
cost meat substitute. Peanuts
are also one of the good
sources of thiamine.
Peanut oil is treated to
neutralize the flavor, bleach
the color and deodorize it. The
refined peanut oil may be
used for salad oil or for fry
ing. You may find a blend of
peanut and olive oils for sal
ads. It can be stored at room
Itemperature for several
months.
In choosing peanuts in the
shell, select clean unbroken
shells. They should nbt rattle
in the < shell. Shelled nuts
which are vaccuum packed
and unsalted will keep longer
than those (with salt or in
cellophane packages. Air and
salt hasten rencidity in pea
nuts.
