'T'HE debonair erisp, golden
-L waffle, aristocratic cousin of
the democratic pancake, has
taken on airs of late and now ap
pears at many gay and fashion
able parties or impromptu suppers.
There are chocolate waffles and
bacon waffles, those containing
fresh fruits, nuts, raisins and so
on—all made by simply adding
any one or more of these tasty
treats to the original batter.
Here’s a basic batter that lends
itself to all kinds of variations.
Waffles:
2 rups sifted pastry H cup cream
flour % cup milk
4 tsp. baking pow- 4 tbsp. melted
der butter
3 egg yolks, well 3 egg whites.
Heaten beaten stiff
2 tsp. sugar, if de- Vi tsp. salt
sired
Sift pastry flour and measure.
Add baking powder, sugar and
salt and sift again. Combine egg
yolks, milk and cream, add this
to the flour, and beat to a smooth
consistency. Stir in the melted
butter and then fold in the beaten

recommend for
Chicken Hashed in Cream:
^4 cup butter
1 tbsp. grated onion 2 cup* chicke^t
(pulp and juice) ‘
\ cup flour
salt and pepper up well
saute onion in butter for a few
minutes. Do not brown. Blend the *
flour with the butter and onion.
