BEAUTIFUL North Georgia
scenery 15 not without its scars.
Some years ago, the chestnut tree
blight moved across our lofty
mountain range leaving gnarled,
lifeless trees in its wide path of
destruction. Today. dead chest
nut trees stab lifelessly irto the
air like the grotesque hand of a
skeleton. '
Those days of roasted chestnuts
around a camp fire are gone.
Youngsters no longer come home
with a supply of chestnuts for
dressing or to roast them in the
ashes of a log fire. What a ter
rible experience it was to stand
helplessly by and watch those
wonderful trees die.
The thousands of chestnut trees
had great value in the existence
of our wildlife. Chestnuts were
a valuable source of food for our
deer. With this great source of
food destroved, much of our wild-

Statistics are generally du!l but
in browsing over some figures
on hunting accidents, one item
stood out. In 600 cases, shooters
19 vears of age or under were the
cause of 211 or more than one
[ third of the accidents. The older
lfho hunter, the fewer accidents.
For example, sportsmen 60 vears
!nf age or older were charged with
lonly 33 of the 60 accidents.
| . This, of course, proves little
|or nothing. Parents would do well
'to give special training te their
|sons in the proper use of a rifle
o1 shotgun. They may think their
boy will never be a hunter but
few men have lived a full life
without taking to the fields on a
great many occasions. We would
do well to teach youngsters to
respect firearms, .
It is interesting to note that

| Here is a delicious stuffing,
.gnnd for fowl or roast meat.
Melt 4 tbsp. butter and pour
‘over 2-1/2 c. soft bread crumbs
in a large mixing bowl Add tsp.
|salt, 1/8 tsp, pepper, one beaten
' egg, one c. grapefruit juice, one
l¢. grapefruit sections, 2 tbsp. dri
led celery leaves and 2 tsp. onion
| juice. Mix lightly.
When a rich meal is in pros
pect, it is wise to start or conclude
with something light and low
caloric. For a tart-sweet, refresh
ing finish to a generous dinner
there's no better wind-up than
a broiled grapefruit half as pre
pared by some of our smartest
hostesses.
Simply halve a grapefruit, re
move seeds and membrane and
separate sections with a sharp
- knife. Lightly spread the top of
~ each half with light corn syrup or
honey, then sprinkie with your
favorite spice, be it nutmeg, cin
namon or allspice. Pop grapefrult'
halves under broiler, and broil 5
to 10 minutes until grapefruit
