Pickle making has become
quite popular with homemakers
of today. Take your pick —
quick process pickles, relishes,
fruit pickles, brined or cured
pickles.
There are a few points you
need to remember, however.
Make sure you us® quality in
gredients, follow a tested re
cipe, use proper equipment, and
store your pickles properly af
ter you’ve gone through all that
work.
Vegetables used in pickle
making should be fresh, crisp
and free from blemishes, and
sorted for size and degree of
maturity. They should be pro
cessed within 24 hours after
harvesting. For best results
with cucumbers, use a picking
variety, harvest while still im
mature and process promptly
after harvesting.
Two types of vinegar are on j
the market you can use — ap
ple or cider vinegar and distil
led vinegar. It should be clear
with a standard four to six -
percent ascetic acid. I
Now what about the salt?
Use the pure granulated salt
or common salt. Table Salt con
taining an ingredient to pre
vent caking should not be used.

Fresh spices are needed to I
give the desired flavor. Whole
soices are recommended. Tie I
the spices loosely in a cloth bag
and remove them before pickles
are packed in the jar. This is
done to prevent discoloration
and off-flavors.
