For delicious at-home eating or for sure-to-be-appreciated
giving, “Mocha Date Cake” will add joy to the Christmas season.
Loaves and round cakes are equally appetizing in this case, and
either will disappear with astonishing speed once it is tasted.
Packaged pound cake mix simplifies the preparation. Pitted
fresh California dates are another time-saver for the cook. They
•re now on grocery shelves in pound and half-pound packages to
augment fresh dates found in produce sections of stores. “Mocha
Date Cake,” a true holiday treat combining luscious chopped
dates, cocoa, instant coffee powder, nuts and other festive foods,
is certain to make this Yuletide a memorable one for family
■nd friends alike.
Mocha Date Cake
M cup powdered cocoa 1 package (17-oz) pound
2 tablespoons powdered cake mix or 2 packages
sugar (9-oz. each*
2 tablespoons instant coffee (4 cup evaporated milk
powder Vs cup water
2% cups pitted fresh 3 eggs
California dates 2 teaspoons rum extract
1 cup nuts, chopped 1 teaspoon vanilla
V 4 cup sifted all-purpose flour
Grease and flour a loaf pan (9x5x3 inches) and a coffee can
(1-lb.). Blend cocoa, sugar and coffee powder together in small
bowl. Chop dates. Add dates, nuts and flour to cocoa mixture.
Prepare pound cake as directed on package, except substitute
evaporated milk and water for liquid called for and use 3 eggs.
Fold in cocoa-date mixture and flavorings; pour into pan and can,
filling about *4 full. Bake in 325-degree (moderately slow) oven
■bout 70 to 80 minutes or until cakes test done. Remove from pans
and cool. Wrap well and store 2 to 3 days. If desired, top cakes
with a thin frosting of powdered sugar blended with milk or
orange juice to spreading consistency. Garnish with date slivers.
Makes 1 loaf and 1 round cake.

In science we are learning
many interesting things about

In arithmetic, we are study

We are decorating our room,
