Chopped Brazil nuts bring new texture interest along with i
their distinetive and popular flavor to pouliry stuffings. The
addition of nuts makes the traditional bread crumb stuffing com
pete in popularity with the turkey. S
' To save time during the holiday dinner rush, have Brazil nuts
shelled and ready to use. The crinkly, tough sheils of Brazil nuts
are easily cracked if the nuts have been frozen several hours in
the food freezer or in the freezer section of the refrigerator.
The Brazil nuis can go into homemade or packaged stuffing
mixes. Add ¥4 cup of the chopped nuts to each 8-ounce package
of mix used, and follow package directions for preparation of the
stuffing. Additional stuffing can also be made and baked in foil.
Brazil Nut Bread Stuffing
14 cup butter or margarine 14 teaspoon poultry
2 cups chopped Brazil nuts seasoning
15 cup chopped onion 8 cups lightly packed
12 cup diced celery with bread crumbs
leaves 2 tablespoons chopped
1 teaspoon salt parsley
14 cup water or stock
Melt butter in skillet. Add Brazil nuts, onion, celery, salt and
pouliry seasoming. Cook until Brazil nuts are lightly browned.
Add to bread crumbs and parsley in large bowl. Add water or
stock. Toss lightly with a fork. Sprinkle cavity of bitd with ad
ditional 1 teaspoon of salt before stuffing lightly. Yield: Enough
for a 12-14 pound turkey or 2 6-pound turkeys, using 3 cup
stuffing per pound dressed weight.
NOTE: If desired, stuffing may be baked separately to serve
with chicken, veal or beef. Place stuffing in foil; seal edges tightly.
Bake in a moderate oven (350-375°F.), 35 minutes, or in a slow
oven (325°F.), 45 minutes. |

What’s the Use?
Most American communities
are worried about their slums.
And about the people who live
in them. We hear many prob
lems of overcrowding, depen
dency, delinquency, and disease.
When help is offered to re
develop slums into happier and
healthier places in which to
live, it sometimes has met with
attitudes of distrust and skep
ticism from the local people.
They may say “What's t h e
use” and “I don’t care.”
If such attitudes existed in a
slum neighborhood where a TB
association in a large Eastern
city recently worked, they were

skillfully overcome.
Overcrowding plus poverty
can add much to the threat of
tuberculosis. An organization
dedicated to fighting TB must
be dedicated to fighting slums.
It must recognize that you can
not renew blighted metropoli~|
tan communities without help
ing to renew their people.
Facing a high TB prevalence
in a slum neighborhood, one
big - city Christmas Seal or
ganization recently did some
thing more than call out the
x-ray buses. First it helped to
mobilize the neighborhood so
that the people became actively
interested in solving some of
its immediate problems. Then|
it encouraged the residents to
set up such self-help projects
as cleaning alleys and back
y ar d s, preventing careless
throwing of garbage, reporting
nuisances, seeking help with
gang problems from the police,
and sponsoring recreation for
children.
For the TB association, the
project closed with chest X
rays. In screening 2,600 peo
ple, it found eight people who
had active TB that they didn’t
know about — each of whom
might otherwise have spread
the disease to others.
