f ood Preservation Planning
The 1963 food preservation
season isn't too far ahead. Some
planning and organizing now
will make the job easier.
A good place to begin in
planning the program is to
check the inventory of pro
cessed foods on hand. All can
ned foods should be used with
in 12 months. For best quality,
don't keep frozen foods longer
than 12 months. Foods such as
liver, pork, and most pre
cooked foods have a shorter
shelf life than others. If you
have a rather large supply on
hand, plan menus that will use
these before the new crop ar
rives.
Unless you have one of the
newer freezers that doesn’t re
quire defrosting, you will need
to check this. A freezer needs
defrosting if there is one-half
inch of frost over a large area
of the refrigerated surfaces. If
the freezer is not too full, food
packages need not be removed.
They can be moved from one
part of the freezer to another
as the job progresses. However,
you will need to disconnect the
freezer and remove all food
packages if the deposit contains
ice. In this case, place the fro
zen packages in a cold place.
You can cover the food with
a blanket or wrap in news
paper. You should get the food
back in the freezer as soon as
possible.

Frozen Food Storage
It’s a good idea for home
makers to keep a watchful eye
on frozen foods stored in con
ventional refrigerators.
Recent research has shown
that frozen food quality deteri
orates after only a few days of
storage in a conventional re
frigerator’s ice-cube depart
ment. Frozen food quality can
be maintained for long periods
in bhe cold storage areas of
most combination refrigerator
freezers.
It has been known for a
long time that home freezers
are satisfactory for storage of
frozen foods if control settings
hold the temperature at zero
degrees or lower and if pack
aging and other prescribed con
ditions are followed. Even un
der these optimum conditions,
however, the maximum storage
time varies for different types
of food. For example, ice cream
should not be stored more than
a month. Fruits can be stored
for as long as a year.

week will be the 44th annual
meeting of the Georgia Home
Economics Association. This
will be held at the Atlanta

Newspapers and radio and
TV stations will help tell the
story of the home economist

Color Considerations
In choosing colors for wood
paneled walls, the type and
purpose of the living area
should be considered.
According to the Southern
Pine Association, “cool” colors
are relaxing and hence desir
able in sleeping and study
areas. Stimulating “warm” col
ors are preferable in the family
room and entertainment quar
ters.
The sunshiny golden hue of
Southern Pine is a “warm”
color which is left unchanged
with a natural finish. However,
any of the “cool" colors can be
applied simply by tinting the
finish with oils. The applied
color is transparent to expose
the grain and looks just as nat
ural as the wood’s actual hue.
