Turkey Wise Choice
For September Fare
Turkey Is a wise choice for
September family meals.
September marks the beginning
of the fall marketing season for
turkey, the U. S. Department of
Agriculture’s Consumer and
Marketing Service points out,
with marketings this month ex
pected to be slightly larger than
during September 1964.
USDA says turkey production
this year likely will exceed by
2 to 3 percent the 99.5 million
birds raised during 1964.
Consumption of turkey Is
also moving upward. According
to USDA forecasts, civilian per
capita consumption of turkey this
year will climb to 7.3 pounds
per person during 1964, and a
1957-59 average of 6 pounds per
person.
When shopping for turkey, the
Consumer and Marketing Service
suggests looking for the official
USDA inspection mark and Grade
A shield on the label. The
inspection mark certifies that the
bird has been examined for
wholesomeness, under the close
supervision of a CAMS inspector.
The grade shield is the con
sumer’s guide to quality. USDA
Grade A turkey is well-fleshed
and meaty, well-finished, and has
an attractive appearance.
In determining the size turkey
to buy, a useful rule-of-thumb is
to allow about 3/4 pound, ready
to-cook weight, for each planned
serving.
