Some Oyster Recipes

According to the calendar* It i» time
for oysters! Epicures say that no one
with a soul would think of eating them
so early, but that has nothing to do with
my case. Each year there must appear
In this column recipes for preparing tlie

nally fried. Fried oysters era popular,
but they are not as delicious as those
served In other ways. Hera than, are

Oysters baked and served In their shells
may be seasoned In many delicious ways.
Opm them, leave them In the df-ep shell,
loosening them. howM-er. turn off a little
of.their liquor If the shell la vsry full,
and then add th- desired seasoning*.
Sprinkle them with chopped chives a
little parsley, pepper and salt, and a few
drops of sherry and put la a vary hot oven
until thsy are unite hot. Or over them
sprinkle some finely chopped fat bacon,
with paprika and a few drops of lemon
juice, ifake as before until they are done
and Quit# hot, bavin gthe oven very hot.

and pour over them a boiling mixture

flour.,and stir to a white roux. Remove
to the table. Henson with emit and
white pepper. Have ready pate-pans
or scallop shells arranged In a bak
ing dish; put three or four fine oys
ters in.each, cover with the white
sauce and cook in'quick oven about
eight minutes <or until the oysters
"ruffle." Serve In the shells. The white
sauce should be thick, as tho liquor
from the oysters will thin it
Panned Oysters.—Fit round* of but
tered toast Into the bottom of pate
pans: lay on these as many oysters
an the pan* will hold, season'wlth salt
and pepper, lay a dot of butter ujwn

roaster to cook in a quick oven about
10 minutes or until the oysters "ruffle’*

Add a Little Tabaseo.
Deviled panned oysters are made In
the same fashion except that when
they are ready for jhe table there
« ould be added to each pan a dozen
ops of Tabasco sauce, stirred Into a
ssltspoonful of French mustard and
