the vicinity of Wnshiegton City.
Permit me to ask what has become
of the lion. Willliam Jennings?
But then 1 ought to knew: Oh!

INTERESTING TO COFFEE
USERS.
Only a Few Know How To Pre
pare the Beverage.
A great many things hare been
said about coffee, both for ami
against it, which are far trom being
true. As it frequently happens that
. those who are excessive coff.se drink
ers are'small eaters. it has been as
serted that col fee, although contain
ing little that is of food value, pre
served the tissues from waste and
consequently made less food twees
sary. This, by as much light as tin
science of the day has ben able to
throw on the matter, is not true.
Coffee is a stimulant, affecting the
neirous and vascular system, and
is, so to speak, a sort of as anxilliary
to both lood ami medicine. If it
agrees the stomach it exhilarates the
drinker, produces a feeling near akin
to intoxication, increasing the fre.
quency of the pulse heats and does
not pass off in depression or co’lapse.
The best authorities have been
consulted for confirmation of the
statement that an excessive indulgence
in ci ffee had produced delirium
tremens- But there is no record of
anything of the kind - Too much
coffee is had, but not so bn 1 as all
that, say the wise men. \n appro
piiule query might here hr put; Is
there anything in the line of good
things, except perhans charity, that
too much of it is not bad?
Coffco, ns also tea, cocoa, male or
Paraguay tta, guarana aud the
African nut kola also dcprnd upon
the alkaloid caff-inc they contain for
their physical and dietetic value'
But the commercial value of coffee
is deteimined by the oil caffeine:
which develops in it by the process'
of roasting; And this very process j
is tlie why ami wherefore that so few j
people iu the civilized world have
ever tasted a rcull.v perfect cup of
coffee. A faultiest - cup of coffee is
nn excellence that 13 not produced I
without labor, aud it is a question if
the game is worth thu candle -
There in a subtle gno.-t in coffee •
that is most easily fiighlenad away,
.but without which the bnvei—gc i
not perfect. Only your Arab, to
whom neither time r r money r; <>t I
much moment, will invariably take-:
the pains requisite.
The c.liVe should be baowned and
crushed tor each meal. You 1 ay
put the guv h cg- I'-c in a common
iron frying pan placed over the fire
and stii constantly while is browning,
which should he as fast, as possible
without scorching it. When the
coffee is dene you will know it, Ur
it will exude an oil which will give
the berries u shinny look. Now ;xi
it aside for a few moments to cool
partly.iy. Feme machine should he

All the histories of arctic rxphna
lions prove the great value of coftae
a? a help to resist the devastating
effects of extreme cold. The Swedes,
and most of the people who live m
the norhern countiies, arc great
coffee drinkers. In the city of Stock
holm the society ladies have after
noon I, o’clock social affairs, which,
in a measure, correspond to the
American 5 o’d k tea. This ft.

Her reply was: “No, not a hit.
Everybody that we knew was there,
so we bad nothing to talk about.”
The Arabs and Turks aro also
great ceffew drinkers and their coun
try is hot. On these people another
of ihe valuable attributes of coffco is
brought to besr. It lightens -the
sensation of fatigue apd sustains the
strength under long and severe mus
cular exertion.
Quo of the advnntfi&es of coffee is
that it stimulates the brain to quick
action. Many a poet has earned :i
