Answer. —Tliero arc several good ro
eeipts for pickling beef. The following
is simple and will give satisfaction: Cat
up your beef in pieces to suit, rub well
with salt and pack tightly, or rathor
closely, in a barrel or cask two days lie
fore patting in pickle. This draws oat
the blood and the moat mast lie taken
out of this first vessil and w ished be
fore packing fdr pick i ig. Then pack
in a clean oak or cypress barrel as
closely as possible, as i -.v.tot t‘n turret
is nearly full pour over the moat a brine
made as follows: T.i 4 gallons of water
add 7 pounds of salt, 2^ 2 ' ounces of salt
petre aad l)jj pounds of granulated su
gar, boil, strain with care and lot it be
perfectly cold before p mring it on tho
meat. Then pat a weight on the meat
to keep it down bdow the snrfaeo of the
brine In a fow week t the hoof will be
ready for use.
Tho same method may bo pur
sued in curing hams and shoulders
of hogs. If then yon wish to smoke
your hams and sh udders take them
out of the pickle in livo weeks,
wipe dry and hang up for a day
or two before smoking. Then smoke
with corn cobs or hickory wood fora
•"S#k or ton days, taking care that the
seat does not get hot whilo being
tmoked. After smoking, dip the hams
and shoulders for 82 seconds in boiling
water, to destroy any eggs that the (lies
may have deposited on them; then wipe
dry and wrap them in sweet, avoll cured
hay, and slip them in cheap sacks of
any kind that have no holos in them.
Lastly tie up ami hang in a cool place.
Hams thus treated will be g >od at all
times, and best after hanging up for 12
months. Tho sides and heads may bo
picklod in tho same way, and than
smoked or not as you prefer. Here is
another receipt for those who like spice
flavored meats: For ovory 10:) pounds
of meat take 8 pounds salt, 11 pounds of
brown sugar (or 1 quart of molasses), 2
ounces of saltpotre, ounces of cloves
and Iftf ounces of black popper. Put
these in sufficient water to cover tho
moat wiion packed, and boil and skim
oarefully; when perfectly oaid, pour
ever tbe meat, that has been packed in
a barrel or cask, keeping tho meat
weighed down below the brine. Of
course tho meat to ba thus pickled
should ho well rubbed with salt and
packed, for two days before pickling, in
order to draw out tho blood. Thou take
up and wasli before p'ckling. There
is uo trouble in saving the side moat;
either cut up and pickle as above, or rub
well and pack in boxes, putting plenty
of salt on each layer of meat as you pack
it. If you desire to smoke the sides,
take thorn out of the salt in live weeks,
and treat them ns you do ties shoulders.
If you cannot got the oldfashioned
coarse salt, iuorcaio tho quantities re

Answe. — l am glad that you asked
the above question, as it gives tin a t
opportunity to again call the nttoutiou
of the farmers to the cheating and
swindling that they aro subjected to by
tho unprincipled m>n who rob them of
their hard earned m may. A month
ago 1 denounced ouo J. 1). Butler of
Dunn, N. 0., who had trave’.e t exten
sively through the state, Bellinc a form

■enta of which absolutely have no exist
ence. Under tho law, which l will
presently quote, that man could have
been lined nud imprisoned in any county
In Georgia where ho sold ins so called
chemicals. 1 have roeout.y received a
letter from the said J. I) Butler, sta-
tiiiff that I hail misrepresented him, ami
asking mo to retra t my published
statement eoureriling him. In the antno
letter he sent me the following formula,
representing it to bo the same that he
sold, or offered for sale, in Georgia:
(Nitrate Potash) 12 non mis
(i-nlphato of Ammonia) 12 pounds
(Sulphate of Potash) 12 pounds
(Calcium Oxide) Hid pounds
(Curb Soda) rd pounds
(Chloride Soda) 2 bushels
This is an unlawful formula. The
‘‘calcium oxide” and the “curb. soda"
would drive off the mum mi i. and the
term “chloride soda” is quit' e. loose
way of designating what is probably
intended for comm m salt. • Ciiiori lo

fecting solution. It was offered for sale
unlawfully, in that it was not anprov 1
by the Commissioner of Agriculture

due or imprisonment, or both. “You will
thus sco that no fertilizers or chemicals
to mu :e fertilizers, can be lawfully sold
in this state without the approval of this
department. This law is solely in the
interest, and for tho protection of farm
ers, and as they largely compose our
grand juries, I think they should be
particularly active in ferreting out, all
