character of Prof.Horsford’s phosphatlo
preparations. Beoent examlnationa
mode by me of the “ Acid Phosphate”
and ‘‘Bread Preparation,’ showthem-
to be exactly what is claimed for them
in thedrculars accompanying the pack
ages. The “ Acid Phoepnate” is a con
centrated solution in water of Aold
Phosphate of Lime. The “ Bread Pre
paration ” is a mixture of Acid Phos-
iliste of Lime, carbonate of soda and
noar. When mixed with water, carbonic
acid gas is llbersted and a double phos
phate of lime and soda is formed and
remains In the bread when baked. In
ordinary cream ol Urtar baking powders
the suhstance left in the bread after
‘‘raising” la rochelle salts—a double
art rate of soda and potash. The phos
phate* are useful mineral substances in
animal nutrition and growth, the tar-
rates are not. in my opinion, the
