Household Hints.
Rv* IlitKAD.—Pour boiling water on rye
meal and mix into a stiff dough, make in
to vjtutros or rolls and bake in a hot oven.
When the beginner can manipulate tho
dough readily, ho may succeed in making
it light in loaves, three inches in diameter.
Raised Cake.—Five cups of flower, one
of butter, one-half cup of yeast, three cups
of milk. Rub the butter into the flour,
add milk and yeast, and set it to rise ;
when risen, work in tire sugar, add spice
to taste ; when raised put in with a fork
one oup of floured raisins.
lIOAF OH OIHOEIIBBEAn.—One cap of
butter, two cups of molasses or one oup of
molasses and one cup of sugar, two eggs
well beaten, one teaspoon full of salnnitiu,
one cup of milk, ‘sweet or sour (if sour
heap your spoon with sslaratus), flour to
the consistency of pound-cake,
i Scoah Cake. —Ono pint of dry flour,
ono-lialf a pint of butter, one-lmlf of sugar,
mix the flour and sugar, rub In tho butter,
and add an egg beaten with enough milk
to moisten tho wholn ; roll thin nml bake
in a brick oven. These recipes are for
those who have few eggs or none.
Ybas* Oakes. —These are made by stir
ring in oormneul to fresh, well risen yeast,
anil working it up into a loaf, cut off thin
slices nml put them where they will dry ;
if near the Are don’t lot them get too hot.
To uso any yeast cakes I souk them in a
littlo warm water until soft, and stir thorn
right up with tho flour.
UiiEwm.- -This is made of pieces of dry
bread. Place the pieces in a spider or
other convenient vessel, your on oohl milk,
sprinkle in a little salt and pieces of butter,
as much or as little as you wish ; set it
over tho Are j when it lwils it is dona
This may be made with white or with
brown bread, and is very good.
Cahtdf, I’uddino.—Two eggs, one-quar
tor pound of sugar, ono-quartur pound of
butter, onc-qnarlor pound of flour ; bent
butter to cream, aud sugar finely pow
dered, then eggs and flour. Bake throe
quartern of an hour in a moderate oven in
amidl cup* ; when done turn out on a
flat dish and eover with thick, white sauce,
flavored with wine or easeuco.
Fmut Podijimo. Chop six apples fine,
grate six ounces of stnlo bread, add six
, ounces of brown sugar, six ounces of our
raots wsshed carefully and floured. Mix
all together with aix ounces of butter, a
oup of milk, and two cups of flour in which
two ten-spoonfnls of baking powder have
boon thorougly mixed. Hpico to taste.
If necessary add more milk in mixing.
Put in a pudding-bag, tie loosely, aud boil
throe hours. To bo eaten with cream
sauce.
i Tka-Cakes.— Rub a quarter of a pound
of butter into a quart of dried flour, then
bent up two eggs with two tea-spoon fulls
of sifted sugar and two teu-spooufulls of
yeast; pour this mixture into the middle
of the flour, adding a pint of warm milk
us you mix it. Beat it up with the hand
until it oomes off without stiokiug, and set
it to rise before tho fire, oovering with iv
cloth, and after an hour make it iuto cakes
about an inoh t hick, Set them on tin plates
to rise before the tiro for teu minutes, and
then bake in a alow oven.
Api>ub ob Pbcnk Pudding. —Croat to bo
some as for cream-tartar biscuit, to be
cooked by steam in a covered tin boiler ;
roll the crust to the required sine and half
an inch thick ; uso first a layer of crust,
theu sliced apple and so ou having the top
layer a crust, leaving room for tho pmldiug
to swell; if prunes are used swell them
first by Soaking them in warm water; dou’t
let them boil, as that breaks tho skin.
Cook the pudding au hour and a half or
two hours, according to the sire. Make a
sauce same ns for dumplings. I have made
these puddings with peaches, both fresh
und dried, anil with dried apples (always
swelling the dried fruit), with blackber
ries and with whortleberries (or lnicklo
lmrries), aud 1 never knew of one being
inudo this way.
Apple Dumpljnos —The old way to
make these is to make up dough same as
for croam-tartar biscuits, take a piece of
the dough, either roll or pull it with
bauds till it is about half an inch thick ;
take a cored and pared npple, a half or
quarter, according to the sire, put it in
tho ceutre of the dough, make it up into a
round boll, pinching tiro dough together ;
if too thick when it is closed cut off a
piece of the dongh. When all are made
drop them into boiling water aud boil
them half an hour. I uso aaueo with a
cup of sugar and a cup of water boiled to
gether for a few miuutos, and a small
pieoe of butter and a little nutmeg.
Bbown Br.EAD.-Oue quart of milk, sour
if you have it, if not sweet; four oups of
cornmeal, two cups of either rye or wheat
flour, just which you prefer, or rye meal,
two-thirds of a cup of molasses, ouo even
tea-spoon fill of salt, a heaping tea-spoonful
of soda or saloratus ; this may he baked ;
we like it best cooked iu a covered tin
pudding boiler, and set into a kettle of
boiling water, first putting into the kettle
throe or four very largo nails for the boiler
to set upon ; steam two hours aud a half.
I never scald meal for bread except when
I have made the old-fashioned kind that
is risen with yeast, but wo like this kind
of bread much better.

Richard F. Tynan, residing on Nashua
street, Boston, Mors., quarreled with his

arrested and locked up.

These Bond* are issued for the purpose of rais
ing funds for the erection of a building in tho
Oily of Now York, to be used for a
Perpetual World’s Fair,
a permanent home, where every manufacturer
can exhibit and sell his goods, and every paten
tee can show his invention; a centre of Industry
which will prove a vast benefit to the whole
country.
j For this purpose, the Legislature of the State
j of New York has granted a charter to a number
i cf onr most wealthy and respectable merchants,
and these gentleman have purchased no lew than
eight blocks of the most valuable land in the
City of New York. ’The building to be erected
will be seven stories high (150 feet in height),
surmounted by a magnificent dome, and will
cover a space of 2*2 acres. It will be constructed
of Iron, Brick and Glass, and made fire-proof.
The bonds, which are all fors2o mu h, are secured
by a first mortgage on the land and building, and
for the purpose of making them popular, the di
rectors nave decided to have quarterly drawings
of 1150,000 each: this money being the interest
on the amount of tho whole loan.
Every bondholder must receive at least 121 00,
but he may receive
$100,000!
