Egg Muflms —One quart of (lour one

en eggs and milk: mix quickly into a
smooth batter two-thirds (ill cold gr eas

fifteen minutes.
Tart Crust.—One cup of lard one
half teaspoonful of salt the white of an
egg one-quartor teaspoonful of sugar
one eighth teaspoonful of saleratus
three tablespoonfuls of ice-water: Hour
to roll; mix lard with one cup of Hour
add salt sugar and cream tarter: beat
egg. mix with water and saleratus all
Together; keep the dough cold; add
Hour to roll one quartern!'an inch thick.

Apple Griddle Cake—.Cold stewed
apples half pint graham half pint, corn
meal half pint half teaspoonetul of salt,
one and one half teaspoonful of Rum
ford’s Yeast Powder two eggs nearly
half flint of milk; half the fruit free from
lumps dilute with the beaten eggs and
milk; sift together the graham corn
meal, salt, and powder which add to
tho other preparation; mix smooth and
thoroughly into a batter that will run
from the mouth of a pitcher in a thick
limpid stream; hake on a hot griddle in
cakes as largo as desert plates brown
on both sides.
Spiced Citron Pickles. —Prepare the
citrons us for preserves and to every
four pounds of fruit take two pounds
of light brown sugar one half an ounce
of whole cloves and the same of stick
cinnamon and one pint of strong cider
vinegar. Roil tho sugar spices and
vinegar together putting, the spices in
a little bag of muslin and skim it woll
and when no scum rises, turn it over
the melon boiling hot and let it stand
t wo days. Pour off the pickle and put
the jar into » moderately boated oven
and steam tho melon while the syrup is
boiled again and skirned. Turn it
over the fruit sealing it up at. once and
in a month it will be very delicious.
Light Brown Bread —Mix together
three enpLtls of rye meal not rye flour
two of Indian meal one of molasses, one
teaspoonful of Ralt and four cups of
milt. *,mr milk maybe used with the
addition of two level toaspoonfuls of so
da dissolved in it and it makes better
lit.ad than sweet milk. Beat these
ingredients to a smooth hatter, pour it
into a ’ uttered covered mold or tin pail
set it. in a pot containing boiling water
to react: half way up the side of the
mold and steam it at least two hours
then uncover the mold and bake it for
half or three quarters of an hour in a
moderate o.ven; tho bread is done when
top and sides are of a light brown.
Apple Fritters.—Peel and coro a
dozen apples; cut in slices about a
quarter of an inch thick; pour a wino
glass of brandv and a quarter of a
pound ol pulverized sugar over them;
cover them and lot thorn stand an hour
tinning the apples occasionally, make
a hatter os follows: A half pound of

ful of salt a saltsponnful of grated nut¬
meg the brandy off tho appples and
nearly a pint of water or enough to
make a rather stiff briefer and .a tablo
epoonful of salad oil; heat the whites of
the eggs very stiff ana stir in the bat .
ter then stir in the apples and fry in
plenty of lard: when fried to a Rico
brown put the fritters on a piece of
brow paper to get nil the greaso off
and sprinkle with pulverized sugar.
