.CHOOSING POULTRY.
In choosing poultry never buy a bird
that cannot be cleansed without wash¬
ing Jt ought to be so cleanly picked
and drawn that a towel would be suf¬
ficient. Buy a chicken that ha3 white
flesh and pale yellow' fat. In buying
tame ducks young ones are the best,
and if you take hold of tbe under part
of the bill and can either bend or break
it the duck is young. The breast be
ing hard and thick denoies that it is
fresh and sweet. No duck, eitlior wild
or tamo, is good unless fat. The tame
ducks are served svii h apple or cranber¬
ry tauce, wi.b currant jelly, or oranges
and frequently with olives stewed in
the gravy about five minutes before the
bird is served. When gee.se are young
and in good condition their legs are soft j
yellow and rather downy; if the legs
are stiff and dry they are bad and j
tainted. Some kinds of tame birds le '
quire to be kept a little, others ought
to be eateu as soon as possible; the*,
pigeonB are best when quite fresh uud
lose ail taste and flavor if they are kept;
but turkeys require to be hung up for '■
several days before they are tender. !
