We used about a BO gallon barrel packed full of the hay, which was changed or renew ed every day. * The juice J filtered throgh the hay and through an inch auger hole in the bottom of barrel into a tub, then poured in to another barrel into the kettle. Use a saehrometer, which can be bought from S. A. Way & Co., for 75c, cook the juice until it regis ters from 88 to 85 degrees and you will have bright uniform syrup, which will not ferment. Above 85 degrees the syrup will crysfcalize; 38 to 40 it will granulate and you will have sugar at botton of bar rel. For convenience in using the saehrometer we had ,a tin tub made obout 12 inches long and 1^ inches in diameter with a recepta cle for handle like an inverted coffee pot spout in wich was fit ted a wooden handle. When you wist to try the syrup, dip out the. tub full of the hot liquid, drop the saehrometer in it and it regis ters the consistency. Repeat every few minutes until it reaches 33 to 35 degrees, according to the thick ness you wish your syrup. The s} r rup will be all of a uniform thickness 1 and will not crystalize, granulate or ferment and'will keep all summer and be as good as when cooked. J. L. Anderson.
