If maximum market value is to
be realized from sweet potatoes,
they should be handled about as
carefully as an egg, says Extension
Marketing Specialist W. C. Carter.

SWEET POTATO FLAKES
Research workers are now ex
perimenting with producing sweet
potato flakes, which could improve
the market for large or misshapen
potatoes, according to W. C. Car
ter, Extension marketing specia
list at the University of Georgia.
The flakes are made by peeling,
slicing and cooking sweet potatoes,
then pulping and rolling them out
in dry sheets on a drum dryer.

PINES ON HOME GROUNDS
Thinning trees to a reasonable
number and properly pruning
those left is the way to obtain
healthy and beautiul pines on
home grounds, says Extension For
ester C. Dorsey Dyer. If trees are
too thick, they will have small
crowns, a slow growth rate and
poor form. They also will not have
enough vigor to ward off insect
attacks.
