I’m delighted to bring you news
and recipes from one of our own
teenagers. She is Joye Talton, win
ner of the state teen-age egg re
cipe contest.
Earlier this year she won over
other teen-age contestants at Mil
ledgeville and was announced
Georgia’s Egg Recipe Princess.
Along with other honors she re
ceived a trip to Chicago for her
self and her home economics
teacher, Miss Sara Lewis.
In Chicago next week, Joye will
prepare her egg recipe along with
other state winners in competi
tion for the national crown. Joye
is the daughter of Mr. and Mrs.
Richard Talton of Kathleen and
has two sisters, Jean and Richie
lynn. Mrs. Talton, Jean and Richie
lynn will accompany Joye to Chi
cago and with this support she has
a wonderful chance to win the
national crown.
Joye likes to cook and her mo
ther, Elizabeth, has encouraged
her all along the way. In planning
her recipe she prepared and serv
ed the dish in her nutrition classes
and invited teachers to taste and
suggest changes. Finally Joye,
Miss Lewis and Mrs. Talton were
satisfied and the dish was named
“Joye’s Mushroom-Eggs.’’
The recipe Joye originated is
versatile as well as delicious. She
suggests serving it for breakfast
on toast, for lunch in potato cups
and as a casserole for dinner.
The Cooks Nook is pleased to
bring you Joye Talton’s prize win
ning dish. Joye, we wish you all
the luck in the world!
Joye’s Mushroom Eggs
4 tablespoons butter
5 tablespoons flour
2 cups hot milk
2 cups grated American cheese
2-ounce can sliced mushrooms,
drained
1 teaspoon dry mustard
1/8 teaspoon garlic salt
1 teaspoon Worcestershire
sauce
1/8 teaspoon seasoning salt
Vz teaspoon onion salt
6 hard-cooked eggs, sliced
Melt butter, add flour and milk;
stir until blended. Cook on low
heat until thick, stirring constant
ly. Add next 8 ingredients, mix
well. Place sliced eggs in casserole,
pour mixture over eggs, top with
bread crumbs. Cook at 350 de
grees for 15 minutes. Remove from
oven and sprinkle with paprika.
French Fried Potato Baskets
Peel potatoes, wash and dry
well. Shred on coarse shredder,
Using two hand strainers, one
slightly larger than the other,
place shredded potatoes to about
V 4 inch thickness, having potatoes
high as possible. Fit smaller strain
er into potatoes, turning gently to
form a basket. Holding the two
strainers firmly together, lower in
to deep hot fat and fry at 375 de
grees until golden brown or crisp;
about 1 to IV6 minutes. To remove
potato baskets lift up strainer and
strike lower strainer with a knife
to release the basket. Fill with
creamed eggs or any other cream
ed foods.

AID ELIGIBLE!

IN SIXTY DAYS
Mrs. W. B. Evans, director of
the Houston County Department of
Family and Children Services,
gives answers on services of
FACS:
1. When application has been
made and the applicant has been
found to be eligible and in need,
how long is it before actual aid
is received?
Upon completion of the investi
gation and establishment of need
and eligibility, the applicant will
receive a check within sixty days.
2. Who makes the actual deter
mination as to whether an appli
cant is or is not eligible and if so,
the amount of the grant?
All decisions concerning eligi
bility and the amount of the grant
are made by the County Board of
the Department of Family and
Children Services within the
framework of Federal and State
policies as determined by the case
worker. The County Board is made
up of five local persons who are
recommended by the County Com
missioners and are appointed by
the State Director of the Depart
ment.
3. If a family owns their home,
is it possible for them to qualify
for Public Assistance?
Yes. State welfare regulations
provide that a family or an indi

ceive Public Assistance and also
own the home in which they live.
In addition to the home, the fam
ily or individual may have as a
reserve, SBOO in cash, insurance,
or some other form of savings.
Provision is made for this sum
of money or reserve because that
is considered essential to take care
of emergencies or other unforseen
expenses.
