Count on canned pineapple’s golden goodness to give Swiss steak
a new twist. Easy does it, just add onion soup mix to syrup
drained from pineapple and pour over the browned steak. The
i full flavor develops as it slowly simmers and there will be
plenty of gravy to serve over noodles or other go-along. Add the
pineapple slices and touches of green pepper and fresh tomato
just before serving. Delicious —of course, and pineapple made
it so.
PINEAPPLE SWISS STEAK SAVOY
3 tablespoons flour Water
1 teaspoon paprika 1 envelope dry onion soup
y 2 teaspoon salt mix
4 pounds boneless top round 1 tablespoon cornstarch
steak (about 3 inches thick) Thin green pepper rings
3 tablespoons shortening Small tomato wedges
1 (I-pound 4J/ 2 -ounce) can
pineapple slices
Mix flour, paprika and salt and rub into both sides of steak.
Brown in hot shortening in heavy skillet. To syrup drained from
pineapple add water to make l'/a cups. Combine with onion
soup mix and pour over steak. Cover tightly. Bake in moderately
hot oven (375 degrees P.) l‘/a hours or until tender. Top with
pineapple slices; mix cornstarch with 2 tablespoons water. Stir
I into pan liquid. Simmer until clear and thickened. Garnish
steak and pineapple with green pepper rings and tomato wedges.
Makes 6 to 8 servings.

PAMPER YOUR FAMILY WITH A BASKET OF BISCUITS
These tender baking powder rolls have a secret tangy cheese
spread tucked between layers of flaky dough. Tantalizingly spiced
with mustard, garlic powder and a dash of hot pepper sauce, the
1 fragrant biscuits are a cache of tempting flavors.
For warm biscuits on cool days partially pre-bake the rolls for
7- 8 minutes, till they’re done but not browned. Wrap tightly and
refrigerate up to three days or freeze up to two months. Just
before serving, pop the biscuits into a 425° oven for 7- 8 minutes
convenient, easy and delightful!
Using enriched flour means gaining extra nutrients. Enriched
flour contains three B-vitamins, thiamine, niacin and riboflavin
and the mineral, iron. Enjoy it in good health.
SPICY BISCUIT CRESCENTS
18 biscuits
Vs cup sharp process 2 cups sifted enriched flour
cheese spread 1 tablespoon baking powder
1 teaspoon milk 1 teaspoon salt
Vi teaspoon prepared mustard *4 cup shortening
Vt teaspoon garlic powder Vi to % cup milk
Dash hot pepper sauce Melted butter
Blend together cheese, 1 teaspoon milk, mustard, garlic powder
and hot pepper sauce; set aside. Sift together flour, baking
powder and salt. Cut in shortening until mixture resembles coarse
crumbs. Blend in enough milk to make a soft dough. Turn out
dough onto lightly floured surface and knead gently 30 seconds.
Divide in thirds. Roll out one-third to 10-inch circle. Brush with
melted butter. Spread half of circle with one-third cheese mix
ture. Fold circle in half to cover filling; lightly press edges
together. Cut into 6 equal wedges. Roll each wedge, starting at
wide end, sealing point to underside. Place on baking sheet. Re
peat with remaining dough. Bake in preheated 425° oven, 14 to 16
minutes or until golden brown.
* If you don’t sift and in the absence of other directions, spoon
flour directly from container into a one-cup dry measure, level
off, then remove two level tablespoonfuls per cup, according to
USD A recommendations.
NOTE: If self-rising flour is used omit salt and baking powder.
