Here’s a cheese pound cake that not only delights the eye but
pleases the palate . . . just naturally invites the cordiality ol
‘■coffee and.” The Rorden Kitchen created it with all the delight
ful good taste of cream cheese (or Neufchatel for the calorie
conscious) blended with Danish-flavor margarine and eggs.
• Cheese Pound Cake
(Make* owe 9 sr !> r 3-inch lonf cake)
2 (M-oz.) pkgs. Rorden ;! eggs
Cream or Neufchatel 1 teaspoon vanilla extract
Cheese 2 cups sifted cake flour
1 cup (2 sticks) Danish 1 teaspoon baking powder
flavor margarine 1/2 teaspoon salt
I cup sugar
Soften cheese and margarine at room temperature. In a
large-size mixing bowl, heat cheese and margarine until light
and Huffy. Stir in sugar. Add eggs, one at a time, beating well
after each addition. Add vanilla. Sift together flour, baking
powder and salt. Fold into batter; blend well. Grease a 5 x 9 x
d-inch loaf pan. Turn batter into pan. Bake in a moderate
(-‘!25 °F.) oven, about 1 hour and .'{() minutes.
