How time flies! July the Fourth is here and The Nook hopes you have a happy anti safe Fourth. We are celebrating with re cipes “fitting” for this time of year and we are also fill ing a request. Alma Good rich, secretary of our Cham ber of Commerce, called me to fill a request from Ken tucky for a Brandied Peach recipe. The party who asked for this had eaten this de licious peach delicacy when visiting in Georgia and the taste still lingered; thus the request. Geneva, (Mrs. Watt) Rainey made a contribution, a Cole slaw Relish to can that stays crisp. She says it is so good that she wanted to share it as she had so many cabbages, and for anyone who needs this ’tis a goodie. She clipped it from a little magazine and some of you may have missed it. The other is a Squash Pic kle that I had “tucked" away in my files to try. Squash is plentiful now so I thought this the time for it. It is crisp and tart, a little sweet and spicy, the party who gave it to me says it is delicious. Brandied Peaches 2 cups water 4 lbs. sugar Make a syrup of these two ingredients. Peel 8 lbs. peaches and put in cold water to prevent dis coloring. Add a few at a time to syrup and let simmer un til tender. (Do not let get too soft as they will tear apart). Cool on plate. Now take syrup from stove and add 2 cups (1 pint) of brandy to each quart of syrup, stir until cool. Now place cool peaches in jars (sterilized) and place syrup over. Seal. Coleslaw Relish 16 cups finely shredded cabbage (about 4 lbs.) 4 cups chopped onions 1 cup chopped green sweet pepper 1 cup chopped red sweet pepper % cup salt 2 cups sugar 1 teaspoon celery seed 2 cups white vinegar 1. Mix cabbage, onions, green and red peppers and salt in large bowl. Pour in ice water to cover. Let stand overnight. 2. Drain vegetables well, pack in hot sterilized jars. 3. Combine sugar, celery seed and vinegar in a medium saucepan; heat stirring con stantly to boiling. 4. Pour into jars to fill to rim; seal. Cool jars and label. (Geneva says to add 6 to 8 small hot poppers (ground) to this if you like “hot stuff.”) Makes about twelve 8 oz. jars. Put the vegetables in a brine made of 1 gallon water and 1 cup salt in a large en ameled kettle. Let soak for 12 to 18 hours. Drain the squash and onions for about 1 hour, but do not wash them. In the same kettle combine 5 short cups vinegar, 2 cups granulated sugar, 5 table spoons whole mustard seed, 2 tablespoons celery seed, and 1 teaspoon tumeric and boil the mixture for 5 minutes. Add the drained squash mix ture and simmer the pickle for 30 minutes. Bring the mix ture to a boil and pack in hot, sterilized jars and seal. Makes a little more than 4V£ quarts.
