A special election is hereby called
by the Mayor and Council of the City
of Perry to be held on July 1, 1969,
for the purpose of determining wheth
er or not the City of Perry should
initiate appropriate legislation and
enact appropriate ordinances relative
to authorizing a tax exemption on
real estate with dwelling thereon in
the City of Perry which is used as
the chief residence by an owner who
has attained the age of 65 years.
The results of the referendum shall
be advisory only to the Mayor and
Council of the City of Perry.
The polls will be located in the
City Hall and the polls shall open at
7:00 o'clock A. M. on said July 1,
1969 and the polls shall close at
7:00 o'clock P. M. on said date.

Home and Food Notes

The South has a good climate for outdoor activities,
such as dining, entertaining, playing, relaxng, and hob
by gardening. The use of patios and terraces brings
about a need for chairs, tables, benches and lounges in
these livable gardens. Smaller houses and the elimina
tion of large porches focus more attention to outside
garden living areas.
The choice of furniture will vary with the design of
the garden, architectural features, paving materials and
environmental factors. Chairs, tables and seats should
definitely be in harmony with the setting.
A garden with naturalistic surroundings should have
furnishing blending with the environment. Wood and
stone would be appropriate in this situation for per
manent seating. Fancy iron work is more j}t home in a
formal setting. In informal design, metal, plastic, con
crete or wood may be used to good advantage.
Scale and texture are other considerations when
selecting garden furniture. A small terrace can be over
powered with bulky chairs and tables. These features
should be designed as part of the garden as much as the
trees, shrubs and other living materials. Select colors
that are harmonious with the surroundings.
In many situations a retaining wall or a raised plant
er can also be used as a seat. Removable plastic covers
add color and designed at normal east height. This is a
good way to increase seating capacity in a small area.
Planters can be designed with part of the top serving
as a scat and also serve an important function in diivd
ing areas of different use.
Most garden furniture should be weatherproof or
portable for maximum and efficient use. There are
many light, inexpensive metal, plastic and cloth folding
chairs adaptable for use in most gardens.
Present-day gardens are being designed to be ad
ditional living space and consideration should be given
toward selecting furniture that is comfortable as well as
being attractive.
MEAT TO FREEZE
Can I save money by buying a side of beef for my
freezer? I wonder how many Houston County homemak
ers have asked themselves and others that question.
Several folks have asked me that question.
And I have had to tell them there is no clear-cut yes
or no answer. However, I think with a little figuring
each person can find the answer according to his own
situation and circumstances.
According to the U. S. Department of Agriculture
Consumer and Marketing Service, these are the things
you need to know: How much meat you’ll get from a
side of meat, the quality of the meat, the charges for
processing and freezing and the cost of comparable re
tail cuts.
If you are considering buying a side of beef, it’s im
portant to know that the weights quoted are usually
“hanging” weights—that is, the weight before cutting,
trimming and boning. The cutting loss—the excess bone
and fat that’s thrown away—can be 20 to 30 per cent
or even more.
So if you buy a 300 pound side of beef and the cutting
loss is 25 per cent, you’ll get only 225 pounds of usable
meat cuts.
You should also consider that you get a mixture of
cuts, both high and low-cost, when you buy a side of
beef. You might not ordinarily buy some of these cuts,
such as short ribs, stewing beef and brisket if you pur
chased all this retail.
If,you cannot use all these cuts, you will lose some
of the price advantage you might gain by buying in
bulk.
Here is a general guide for ymld of carcass beef:
25 per cent steak, 25 per cent roast, 25 per cent ground
beef, stew meat and similar cuts and 25 per cent waste.
And many of the roasts will be chuck roasts.
Therefore, from a typical 300-pound side, you would
get 72 pounds of roast, including 44 pounds of chuck
roast, 18 pounds of rib roast and nearly 10 pounds of
rump roast. You would also get about 73 pounds of
ground beef and stew meat and about 73 pounds of
steak, of which 33 pounds would be round steak and
40 pounds would be loin steak.
You should consider carefully whether you will be
able to use this quantity of beef within the recommend
ed maximum freezer storage time—eight to twelve
months for roasts and steaks and three to four months
for ground beef. If not, money-saving advantage would
be cancelled, since longer storage tends to make meat
dry and Jess flavorful.
As an alternative to buying a side or quarter of
beef, you might consider buying wholesale cuts, such
as a rib. This would give you only rib roasts, steaks
and some lean trim. You might also consider a whole
sale short loin from which you’ll get porterhouse, T
bone and club steaks.
Or you might consider simply buying your favorite
retail cuts when your local grocery has them on sale.
Many consumers have found this to be the most practi
cal method.
Once you have the answers to the questions I have
raised here, you should be able to decide if. you should
buy your beef in large quantities. If you have further
questions, I’ll be glad to try to help you find answers
for them.
