ATLANTA (PRN)
Atlanta’s Dogwood Festival,
annual herald of the capital
city’s many splendored spring,
is as sure a sign of the season
as are the endless vistas of
pink and white dogwood
blossoms.
Along with the blossoms,
the Festival bursts into bloom
with a week of sprightly
happenings, April 8-15.
The first day, April 8,
marks the traditional Grand
Parade down Peachtree Street,
led by Grand Marshal Phil
Donahue. Marching units and
bands from throughout the
southeast will participate, and
the Dogwood Festival Queen
and her court will grace their
own specially decorated
Festival floats. Music will fill
the city all through the week,
with corner concerts, a gala
Saturday Musicale, and
unmistakable sounds of brass,
Dixieland, folk and rock bands
carried on spring breezes.
Sports events, flower markets,
and outdoor fashion shows
will celebrate the return of
sunshine.
A Festival of Arts will
include symphony, theatre
and ballet performances at the
Memorial Arts Center; a
Boehm porcelain exhibit,
featuring the famous “Bird of
Peace”; National Print
Exhibit; and Festival of Gems.
The First Atlanta
International Food Festival
will offer cooking delights of
many cultures, from barbecue
to bouillabaisse - familiar Old
South specialties to epicurean
masterpieces of the Old World.

GEORGIA EGG COMMISSION
MISS MILDRED HUFF. HOME ECONOMIST
DEVILED EGG CASSEROLE
2 tablespoons water
1 large onion, coarsely chopped
VA cup diced celery (stalks and leaves)
1 can (10Vi ounce) condensed cream of mushroom soup
1 cup milk
V 2 teaspoon salt
X A teaspoon pepper
6 hard cooked eggs
2 tablespoons mayonnaise
'A teaspoon dry mustard
'A cup crushed potato chips
parsley sprigs or pimiento for garnish
Cook celery and onion in water until tender. Add soup, milk,
salt, and pepper. Blend thoroughly. Pour mixture into
well-greased shallow casserole (IV2 quart). Sprinkle with potato
chips.
Cut eggs in half lengthwise. Scoop out yolks and mash with
mayonnaise and mustard. Refill centers.
Set eggs in soup and chip mixture.
Bake at 350 degrees F. for 15-20 minutes or until golden
brown. Garnish with parsley or pimiento. Makes 6 servings.
HARD COOKED EGG FACTS
Never “boil” eggs -- unless you prefer them the texture of
tennis balls. Use simmering water to hard cook them in the
shell.
Shells crack less easily if you let the eggs come to room
temperature. Begin cooking in cold, not boiling water.
The green ring around the yolk is caused by a reaction within
the egg - combining of iron and sulfur. After cooking, cool
them immediately to prevent this.
Very fresh eggs are hard to peel. Use 1 week old eggs or
“age” very fresh ones by leaving them at room temperature for
8 hours.
Hard cooked eggs are low in calories - only 80 per large egg,
77 for medium.
Hard cooked eggs can be stored covered with water in an air
tight container in the refrigerator for 7 to 10 days.
Hard cooked eggs may be stored for 2 months when peeled,
put in a jar and covered with vinegar. Use for egg salad or
deviled eggs.
Hard cooked eggs do not freeze very well. They taste fine,
but the texture is not as fine.
The color of the yolk will vary according to the type of teed
the chicken eats.
“April’s Fair in the
Square,” sponsored by the
Southern Regional Opera and
the Italian Cultural Society,
will be held at Colony Square
April 15 and 16. The event
will feature an Italian food
fair, flea market, continuous
entertainment, and outdoor
dancing.
Area attractions will join in
the fun as well. Underground
Atlanta will serve as focal
point for “Old Atlanta”
activities, including an exhibit
of old-time crafts, as well as
ice cream and watermelon
eating contests. At Stone
Mountain an arts and crafts
festival will be staged at the
ante-bellum plantation, and
special carillon concerts are
scheduled. Six Flags Over
Georgia plans a special salute
to the Festival.
And highlighting the
splendor of springtime in the
South will be the famed
Dogwood Lighted Trails, when
Atlanta “lights up” all over to
show the city at its loveliest.
Nighttime narrated bus tours
will be conducted. And in the
daytime, April 15 and 16, the
Egleston Tour of Homes will
welcome visitors to 13 of
Atlanta’s finest houses. Also
on April 15, the
Morningside-Lenox Park area
will offer both a day and
evening tour of five homes.
