Parathion Safety
Program
For the second year in a
row a cooperative “safe use’’
program is being conducted
to insure that users of
parathion apply the in
secticide safely. An
agreement between the State
Department of Agriculture
and the U.S. Department of
Agriculture makes Georgia
one of 41 states cooperating
in the program this year.
The pesticide industry and
other federal agencies, in
cluding the Environmental
Protection Agency (EPA),
have endorsed the program
and recommended that it be
continued another year.
USDA’s Animal and Plant
Health Service (APHS) is
coordinating the program.
Cooperating with APHS are
USDA’s Extension Service,
EPA, 41 states, and
manufacturers and retailers
of ethyl parathion.
The Purposes
The main aim of the
program is to make sure that
all users of ethyl parathion
understand the potential
dangers of the product so
that they can take proper
measures to protect
themselves, other people and
the environment. The
program is part of USDA’s
continuing campaign to
promote farm safety.
Compliance with the
parathion program will do
several things. For one, it
will enable health officials to
determine areas of heavy
use of the insecticide. Then
area hospitals, physicians
and veterinarians can be
alerted so that adequate
quantities of antidote can be
on hand if needed.
How It Works
The program relies on a
brief form to be completed
by the seller and purchaser
of ethyl parathion. A copy of
this form will go to state
officials for use in deter
mining where the pesticide is
being used. These forms are
being printed and

disseminated to all
parathion dealers by the
basic manufacturers of the
product. These are Monsanto
Co. Stauffer Chemical Co.
and Kerr-MeGee Chemical
Corp.
According to USDA, the
program is directed to ethyl
parathion because this
highly toxic pesticide is
widely used and can be
hazardous if prescribed
safety practices are not
followed.
An increasing amo’mt of
this pesticide is being used
because of restrictions on the
use of other pesticides and
the growing insect
resistance to the chlorinated
hydrocarbons.
Parathion can control
many pests that attack
cotton, fruit and vege' hie
crops. One of its big ad
vantages is that it breaks
down rapidly and does not
leave harmful residues on
plants or in the environment.
But it is dangerous to the
man applying it, if he doesn’t
know what he’s doing. The
cooperative “safe use”
program should hlep.
Before Burning
Why notify the county
forest ranger before bur
ning? For one thing, it’s just
common courtesy. In the
second place, it’s the law.

here at the University of
Georgia Coliseum April 28-29.
Dairy enthusiasts from all
over the state will be on hand
to participate in and witness a
variety of dairy activities, says

failure to notify the county
ranger prior to burning is a
misdemeanor. This could
include prescribed burning
in the woods, a brush pile,
burning stubble off a field
before plowing or planting,
debris around the house -
anything that will put up an
unusual amount of smoke.
In addition to showing
courtesy and obeying the
law, there are several other
reasons why it’s a good idea
to let the county unit of the

mission know. It can save
tax dollars. It costs us every
time equipment and per
sonnel are dispatched to
check some harmless smoke
that was not reported. And of
course, they could be tied up
in these activities when they
are urgently needed at a
genuine wildfire. And by
calling the county forest
ranger in advance,you can
get the latest fire weather
report. This information
could be helpful in deciding
whether to delay the burning
or continue with it as
planned.
Lowly Earthworm
The lowly earthworm may
not be so lowly after all.
Some recent research which
Marshall Babb, assistant
county agent in Cherokee
County, did at the University
of Georgia shows that the
earthworm may have a far
reaching new role in
Agriculture. Marshall began
the study at the request of
Albert Cagle, Cherokee
County dairy farmer. He
found that worms are
masters at the job of waste
disposal. The obvious benefit
to the dairyman is that he
has an inexpensive method
of disposing of waste from
his cows. An additional
benefit; some of the worms
may be sold to fishermen for
bait.
Science Department.
Georgia’s finest registered
dairy cows and heifers will be
on display as the event opens
Friday, 9 a.m., with the Spring
Dairy Show. Welch expects
about 250 entries to compete
in 13 classes of Brown Swiss,
Holstein, Guernsey and Jersey
breed groups.
Before judges Forrest
Fansher, Moncks Corner, S. C.,
and Jerry Conley, Tiffin, Ohio,
select champion heifers and
cows, 4-H and FFA exhibitors
will be judged in a fitting and
showmanship contest.
A type-judging demonstra
tion, illustrating positive and
negative qualities of dairy
animals, will lead off Sat
urday’s schedule.
Four-H and FFA teams will
compete in a dairy judging
contest at 9:30 a.m. Teams will
be evaluated on correct
placement of classes of
Holstein, Jersey, Guernsey and
Brown Swiss animals.
Members of 4-H and FFA
will have an opportunity to
purchase outstanding registered
heifers from the four major
dairy breeds at a Saturday
noon sale open to the general
public. The sale will conclude
Dairy Day activities.
In conjunction with the
dairy weekend, says Welch, a
regional judging conference for
approved dairy judges will take
place Thursday, Apr. 27.
Conducted by the American
Jersey Cattle Club in
cooperation with the Georgia
Jersey Cattle Club, University
of Georgia Dairy Science
Department and the Georgia
Extension Dairy Science
Department, the conference
will be held at the Coliseum
livestock arena.

Hot Dogs Have
Been Around
Quite A While
Through the years, sausage
has been important in the
human diet. Sausages were
mentioned by Athenaeus in
The Deipnosophists, the oldest
cookbook known. This was in
A.D. 228. Epicharmes talks
about sausages. He called them
“oryae,” and entitled one of
his plays “Orya.” This work,
written about 500 8.C., has
Aristophanes saying in the
clouds, “Let them make
sausages of me and serve me up
to the students.”
The word “sausage” comes
from the Latin “salsus,”
meaning salted or preserved
meats. Sausages mr.de in
different parts of the world
were named for the locality
where they were manufac
tured. They are still called by
these names today, although
they are made from modern
formulations. Germany has
been noted for many years for
its quality sausages.
In 1970, about 14.8 billion
hot dogs were produced. This
would be a per capita con
sumption of 72 per year—or
one and one-half hot dogs per
person per week. The “hot
dog” or “wiener” frankfurter
originated in Frankfurt,
Germany, in the late 1600’s.
The term “hot dog” was
coined in 1900 at the old Polo
Grounds in New York City.
Emulsion sausages include
frankfurters, bologna and
many different luncheon
meats. These products are
mostly produced from a
combination of beef and pork
with ice and a minimum of
additives. Frankfurters account
for about 25 percent of all
sausages sold.
Frankfurters are made from
formulations of approximately
40 to 60 percent beef and 40
to 60 percent pork. A typical
formulation would be 60
pounds beef, 40 pounds pork,
25 pounds ice, 3 pounds non
fat dry milk, 2 pounds salt, and
seasoning.
The beef is put into a high
speed chopper with one-half of
the ice, salt and seasoning. This
chopping releases the salt
soluble protein. After three to
five minutes, the non-fat dry
milk is added, then the pork.
At this point, a meat emulsion
forms. By chemical attraction,
the salt soluble protein
surrounds the fat. At this
point, the fat cannot be seen
with the naked eye.
This emulsion is then stuffed
into cellophane casings and
linked. This linked emulsion is
put into the smokehouse,
smoked and heated to an
internal temperature of
approximately 155 degrees
Fahrenheit. At this point, the
salt soluble protein surround
ing the fat droplets coagulates,
giving the red cured color.
When this product is put into
water and boiled, the fat
droplets do not escape. The
frankfurters are chilled, peeled
and packaged.
The manufacture of frank
furters is controlled by Meat
Inspection Regulations. The fat
content cannot exceed 30
percent. The water cannot
exceed four times the protein
plus 10 percent. Meat contains
a water and protein ratio of
about four to one (four water
to one protein). The label on
the product must represent the
actual formulation. The curing
ingredients, such as nitrite, are
also regulated by law. The
addition of nitrite is
responsible for the red color in
cured meats. The average
frankfurter contains 11 percent
protein, 28 or 29 percent fat
and 52 to 54 percent moisture.
According to Meat
Inspection Regulations, an all
meat product may have three
and one-half percent additives
which are needed for proper
processing procedures. A
sausage product marked
imitation may be just as
nutritious as one labeled ail
meat, but it contains soybean
concentrates, non-fat dried
milk or other additives in
excess of the amount permit-

Beware of Bargains
If you’re an avid “bargain
hunter”, chances are,you
are painfully aware of oc
casional pitfalls involved in
the art of searching for
bargains. How many times
have you been disappointed
with your "buy of decade"
purchase? Every week,
store advertisements
promise unbelievable
discounts, terrific savings or
almost give-away prices.
They all sound great, but
what do they really mean?
Question Terms
Such statements as
“furniture, 20 percent off”
can be misleading. Ask
yourself, “20 percent off
what?” And, is this per
centage a reasonable
reduction? It pays to find out
before making a judgment
on whether this sale price is
really a bargain.
Sale items are often
publicized as “comparable”
to higher priced items. What
does the store mean by
“comparable?” Are the
items similar in all respects
or only in a few? What about
basic construction and
special features? Do they
warrant the high prices
normally charged on
products to which the sale
item is compared?
A questioning attitude
toward sales claims will help
you become a smart shop
per. This doesn’t mean to
label all sales claims as
fakes, or that you should
ignore sale items. Do not,
however, take them at face
value - no questions asked.

Frankfurters are recognized
as a typical American food,
with a special combination of
spices which is associated with
frankfurter flavor. Bologna is
formulated very similar to
frankfurters; it just has a
different spice formulation. It
takes about one to one and
one-half hours to process
frankfurters in the smoke
house, and five to six hours for
bologna.
Bologna and frankfurters are
nutritious and tasty, and they
serve as another food to give
variety and enjoyment to our
everday eating.

price promotions that
promised much more than 1
they delivered. Even 1
completely honest sales •
mark-downs may not be
bargains, because the mark
down price may be another
store’s regular price.
Just as we have behavior
patterns, stores have
behavior patterns, and they
are almost as individualistic
as ours. To be able to shop
wisely, we need to un
derstand some general
characteristics of store
behavior.
Check Mark-Up
The “mark-up” is a basic
part of this pattern. “Mark
up” is the difference bet
ween what the retailer pays
the manufacturer and the
price you pay. The size of the
mark-up has some
significance in evaluating
sale prices. Only part of the
mark-up is profit to the
retailer, for he has other
expenses that must be
prorated through his total
sales.
Nevertheless, size of the
mark-up has some
significance in evaluating
sale prices. A ten percent
reduction of an item that has
a 25 percent mark-up is a
greater actual saving than a
30 percent reduction of an
item with a 70 percent mark
up.
Costume jewelry has one
of the highest mark-ups,
ranging above 80 percent.
Women’s shoes and men’s
clothing go over 70 percent,
and electrical appliance
mark-ups fall between 35 and
40 percent.

Is credit good or bad? You
can come up with arguments
on both sides of that
question. But most people
would probably agree that
credit is a tool that’s good or
bad depending on how wisely
or unwisely it’s used.
Save yourself the agony
that results from misusing
credit by asking yourself
some questions whenever
you take out a loan or buy
anything on time.
- What will it cost to use
credit? You should know the
total finance charge and the
annual percentage rate. *
• Can you really afford the
payments? Will they fit your
budget or throw it com
pletely out of whack?
- Will the item or service
outlast the payments?
- Will the item add to your
assets or will you get some
service valuable enough to
offset the cost of the credit?
- Would you be better off
using savings to make the
purchase? That is, should
you save for it or use savings
already accumulated rather
than use credit?
- Can you make this pur
chase, or get the credit, or
both, more cheaply

Here’s what has happened
to the price of your electricity
from our first day in business
until today.
What’s happened is that you’re getting more than
four limes as much electricity for your dollar as our
customers did in 1927.
Back then, our average residential price for a
kilowatt-hour was 7.6 cents. Today it’s 1.8 cents.

And take another look at the price. Electricity is
the biggest bargain in your family budget. Any day.
