Pickling and preserving are two of
our all-American cooking "past
times,” and now when so many
summer vegetables are plentiful ‘tis a
good time to fill jars with spicy
smelling pickles and preserves.
The Nook brings you four recipes
fpMfcur pickling and preserving. A 3-
tlnute Pickle is a quickie, and with
ctpumbers in season this is almost a
m|ißt. A Green Tomato Relish for you
“tomato fans” is a delightfully dif
feWtit idea for tomatoes. The
Cucumber Marmalade and Tomato
Chutney are condiments for your
gourmet shelf.
3 MINUTE CUCUMBER PICKLES
5 pounds sugar
Vi gallon vinegar
7 pounds cucumbers
I tablespoon salt
Vi of 1 ounce box of pickling spices
Bring vinegar, sugar and salt to
boil. Add sliced cucumbers and bring
to boil. Let boil 3 minutes. Remove
and pack in hot, sterilized jars and
seal.
GREEN TOMATO RELISH
6 green tomatoes
6 tart apples
3 large onions
2Vi cups vinegar
2Vi cups sugar
IVi teaspoons ginger
Vi teaspoon tumeric
Vi teaspoon salt
Remove blossom end from
tomatoes: pare apples and cut away
the cores; peel onions. Work
tomatoes, apples and onions through
a food grinder. Transfer to a large
strainer and drain off about 1 cup of
the liquid. Discard this liquid.
Meanwhile heat vinegar, sugar,
ginger, tumeric and salt together in a
large saucepan. Cook until liquid boils
vigorously, remove from stove and
add the ground tomato mixture. Cook

again to an active boil, then reduce
heat and cook slowly for 5 minutes.
Spoon the hot relish into 4 pint jars
and seal. Delicious...
CUCUMBER MARMALADE
2 cups finely chopped cucumbers
4 cups sugar
1/3 cup lime juice
2 tablespoons grated lime peel
Few drops green coloring
Vi bottle liquid fruit pectin
Pour chopped cucumbers into large
saucepan. Add sugar, lime juice and
lime peel; mix well. Place over high
heat, add food coloring; bring to a full
rolling boil. Boil hard exactly one
minute, stirring constantly. Remove
from heat, at once stir in pectin. Skim
off foam; then stir and skim 5 minutes
to cool slightly and prevent floating
particles. Ladle quickly into jelly
glasses. Cover at once with Vfc inch hot
paraffin. Makes about 5 medium
glasses.
TOMATOCHUTNEY
2 pounds tomatoes
2 pounds apples (tart)
4 medium onions
2 cups cider vinegar
2 teaspoons salt
3% cups sugar
Vi cup orange marmalade
2 tablespoons mixed pickling spice
Wash, peel and core apples and
tomatoes. Peel the onions. Cut
ingredients into quarters. Use a
blender or coarse blade of food
chopper to cut the ingredients finer.
Put into a large saucepan. Combine
with other ingredients. Put spices in a
cheesecloth bag before adding to
mixture. Cook the mixture over
moderate heat for 1 to IV4. hours, or
until it is thick. Stir frequently to
prevent sticking. Discard the spice
bag. Pack the sauce into hot sterilized
jars and seal. Makes about 4 pints.

Mrs. Glenda McLeod and
Mrs. Mary K. Holleman
recently received their Ga.
Dental Hygienist License at
the Emory University School
of Dentistry. They were
awarded their license after
appearing before the Ga.
State Board of Dental
Examiners and successfully
completing all of the
requirements necessary for
a Dental Hygienist. The
examination included the
theoretical and clinical
aspects of oral hygiene. Mrs.
Holleman and Mrs. McLeod
are employed by local
dentists.
Perryans Attend
Annual Kiwanis
Convention
Mr. and Mrs. Jim Worrall
and Fran of Perry attended
the fifty-seventh Annual
Convention of Kiwanis In
ternational in Atlantic City,
New Jersey. Approximately
16,000 people, representing
some 270,000 Kiwanians in
5,900 clubs in the United
States, Canada, Mexico,
Europe, Central and South
America, the Caribbean, the
Far East and the Southwest
Pacific Area attended.
During the three and one
half days of the convention,
Kiwanians heard from such
top personalities as Wes H.
Bartlett, President of
Kiwanis International,
Algona, lowa, who presided;
The Honorable William G.
Davis, Premier, Province of
Ontario, Canada; Dr. James
W. Turpin, founder of
PROJECT CONCERN; Miss
America 1972- Laurie Lea
Schaefer, Bexley Ohio; Art
Linkletter, celebrated
broadcasting personality.
The leaders of the Kiwanis
sponsored youth
organizations, Paul G.
McDowell, President of Key
Club International and
Ralph W. Kalish, Jr.,
President of Circle K. In
ternational, were also
speakers.
Besides official business,
the convention featured a
President s Reception and
Ball with Sammy Kaye and
his orchestra; Kiwanis
district banquets; en
tertainment by Anita Bryant
and Dick Shawn; and other
entertainment and tours.
COLLEGE CAPER
Bobby Joe Harris has
made the Dean’s list for the
Spring Quarter at the
University of Georgia. He is
