available in abundance, try
Cucumber Shrimp Saute.
Cucumber-Shrimp Saute
1 pound fr. h shrimp, shelled

oum • • • tape froten
ahrtni; partially thawed
1 tablespoon dry sherry
1 tablespoon corn starch
t teaspoons salt
1 teaspoon sugar
S medium cucumbers, pared
S tablespoons corn oil
Cut shrimp In half length
wise Mix shrimp with sherry,
com starch, 1 teaspoon salt
and sugar. Set aside Quarter
cucumbers lengthwise and re
move seeds. Cut Into Mnch
diagonal pieces. Heat 2 table
spoons of the com oil In 3-
quart saucepan over medium
heat Add cucumbers and 1
teaspoon salt. Cook, stirring
frequently, until cucumbers
are slightly transparent, 3 to 5
minutes Remove cucumbers;
keep warm Add remaining 3
tablespoons com oil to oil
In saucepan, heat Add shrimp
mixture. Cook over medium
heat, stirring constantly, until
shrimp are almost tender Add
cucumbers and cook 3 to 3
minutes. Serve Immediately.
Makes 4 servings.
