Beat 2 egg whites with (/, teaspoon each salt $* 1 and cream of tartar until foamy throughout. Add / 2 cup sugar, s;| 2 tablespoons at a time, beating thoroughly after each addition! Continue beating until meringue forms stiff shiny peaks. Mix in •!;. Vi teaspoon vanilla. Spread mixture on bottom and sides of 8 ,'X Inch pie pan Bake at 250° for 40 minutes; turn off oven and & allow shell to cool in oven at least one hour, Toasted Coconut. Thinly spread about / 2 cup flaked coconut in shadow baking pan. Toast at 350“ for 7to 12 minutes or until : : i : lightly browned. Stir or shake pan often to toast evenly. t'A.
